All about soaking lentils
Lentil dishes are rich in protein, vitamins, dietary fiber and do not lose their beneficial properties during heat treatment, so they are popular, especially in fasting. People who want to cook such a legume for the first time are certainly interested in whether soaking lentils is necessary. We will try to figure out whether it is necessary to soak it before cooking, in what water it should be soaked and whether it is possible to soak it overnight.
Need for a process
There are quite a few varieties of lentils, the differences of which are not only the color and size of the grains, but also the cooking time. Regardless of which variety you purchase, all lentils should be cleaned and washed before cooking. Usually, for this, large debris is selected from lentils, then they are filled with water, mixed, the water is drained and this procedure is repeated several more times.
If there is no visible litter in the grains, the beans can be Rinse and in a colander under running water. Soak will be the next step necessary to neutralize the phytic acid present in lentils. It not only impairs the absorption of many minerals, but also inhibits enzymes in the gastrointestinal tract, which affects the digestion of food.
As a result of soaking in legumes, phytase is activated, which neutralizes phytic acid.
That is why it will be correct to soak any variety of lentils, even one that boils quickly and without such manipulation.By placing the grains in water before cooking, you will not only speed up the cooking process, but also prevent the stomach discomfort that often occurs after eating legumes. In addition, in a humid environment, lentil grains begin to prepare for germination, so the content of nutrients in them increases.
In what water and how long to soak?
Filling lentils with water, choose the right temperature. Experts recommend using water at room temperature - an average of +20 ... +22 degrees. If you pour the grains with hotter water, this will affect their appearance. If you take too cold water, the process will greatly slow down.
As for the time spent on soaking, it is determined by the variety used. The following types of lentils can be kept in water from 1 to 3 hours:
- red;
- orange;
- green;
- yellow.
Usually red lentils are left in water for 15-60 minutes, green - for 1-3 hours.
More time will be needed for:
- brown;
- brown;
- French dark green;
- black lentils.
On average, these varieties are left in water for 10 hours, so they are most often soaked overnight. The duration of cooking after such a preparatory stage is significantly reduced.
soaking technique
Washed grains placed in a suitable sufficiently deep container, and then filled with clean water so that the lentils are completely covered with liquid. To speed up the neutralization of phytic acid, it is recommended to add apple cider vinegar or lemon juice to the water at the rate of 1 tbsp. spoon for 1 glass of water. The container is covered with a lid and placed in the kitchen in a place where it will not interfere.
Until the right time has passed, keep the soaked lentils at room temperature. - Do not put a bowl or pot of beans in a cold place. Before cooking, the liquid must be changed. It is important to carefully drain the water in which the beans have been for a long time, and pour fresh water instead.
In order for the grains to cook faster, it is recommended to take such water not at room temperature, but heated to a boil.
Is it possible to cook without soaking?
Some varieties of lentils can be cooked without prior exposure to water. First of all, they include grains red and green colors. If you want to quickly prepare a side dish of such beans, you can simply rinse them thoroughly, then pour boiling water over them and cook until soft over low heat, stirring occasionally.
Water for cooking takes twice as much as grains. It usually takes 15-20 minutes to boil red lentils to a puree state, green lentils are boiled for about 20-30 minutes. At the same time, salting the water during cooking is not necessary, since salt will delay the cooking process. The dish should be salted at the very end - 5 minutes before removing the lentil porridge from the stove.
Remembering the cooking time is also important when you need to add lentils to a multi-component dish. Most often, the red variety is added to soups and vegetable stews, the dish is allowed to boil for 10-15 minutes, then salted and seasoned with your favorite spices, after which they are boiled or stewed for another 5-10 minutes so that the grains are completely boiled.
If other varieties are used, then they are dipped into water or broth 30-40 minutes before the end of cooking. During this time, the lentils will be cooked, but the grains will keep their shape. If you need to get puree from green lentils, the cooking time is increased by 10-20 minutes, and for brown - by 20-30 minutes.As in the case of red grains, salting other types of lentils is at the very end.
