But far-sighted housewives try to have time to stock up blackberries for future use, making all kinds of preparations. In the autumn-winter season, stingy with vitamins and a variety of berries in stores, blackberry stocks diversify the diet and help restore strength.

How to freeze?

Thinking about freezing berries, housewives are often puzzled by the question: wash the berries or leave them unwashed? But this is all decided at their own discretion. After all, it is one thing to freeze garden blackberries, being sure that they have grown away from road dust and street dirt. But it’s a completely different case if you have to stock up on purchased berries that grew in unclear conditions.

Of course, an unwashed berry holds its shape better when frozen. But still, if you plan to pick blackberries from your own plot in the near future, you should rinse the berries right on the bush with a hose. And start collecting after a few hours. So the berry is washed and preserved in its original form for high-quality freezing. The main thing is to water the bush with a scattered stream so as not to damage the berries with the pressure of water.

And if the berries are bought anywhere, they must be washed. This should be done in a colander, under a scattered stream of running water.

To dry, the berries are laid out in a single layer on disposable paper towels. You should not use fabric towels, because the blackberry juice does not wash off and the item can be thrown away. In addition, the fabric can leave villi on the berries. There are two ways to freeze garden blackberries.

Ripe berries with a pronounced sourness are suitable for the sauce.In order for the sauce to reveal its aroma brighter, it is worth trying to add various spices to it.

Ingredients:

  • 3 art. blackberries;
  • 100 ml red semi-sweet wine;
  • 1⁄2 tsp salt;
  • 1.5 st. l. Sahara;
  • 50 ml grape vinegar;
  • 1.5 tsp ginger;
  • 3 cloves garlic;
  • a mixture of allspice;
  • 2 tsp corn starch.

Rinse the berries first and pour into a saucepan. Pour in the wine and place the dishes over the fire. Boil for 10 minutes and allow the wine and berry mass to cool slightly. Then, using a mashed potatoes or a culinary pestle, thoroughly mash the berries. Wipe the warm mass through a sieve and put a saucepan with berry puree to simmer over low heat. Sweeten and salt the sauce to your taste, seasoning with spices at will. For example, blackberry is combined with coriander, suneli hops are originally set off. You can make a sauce with dried herbs and capsicum.

Further, ginger and ground garlic are required for the sauce. They need to be crushed and added to the prepared mixture. Red basil is dipped into the sauce directly with whole sprigs. It is needed in the recipe only for flavor. At the end of cooking, it is removed from the sauce and not used further. For greater sharpness, balsamic or grape vinegar is introduced into the sauce. Ingredients:

  • 2 kg blackberries;
  • 3 art. water;
  • 400 g of sour apples;
  • 2 kg of sugar.

Blackberries put in a saucepan, pour a glass of water and put to cook on fire. Cook until soft, about 15 minutes. Grind the berries through a sieve. Peel apples from skin and seeds. Cut into thin slices. Pour blackberry puree into a washed pan through cheesecloth. Add water, peeled apples and cook for 10 minutes after the start of the boil. Remove the resulting foam.

Pour in the sugar and stir regularly, bringing to a boil and dissolving the sugar. Jam readiness is easy to determine. You need to drop it on a saucer and set it at an angle.
