How to marinate dogwood?
Dogwood is a shrub or tree from 3 to 6 m high, with fibrous roots. The fruits are small, most often red in color, have a pleasant smell, sweet and sour, slightly astringent taste. Dogwood is quite common in cooking, especially as preparations.
Benefit and harm
The healing properties of dogwood are familiar to everyone who has dealt with this plant: dried fruits are brewed for feverish conditions and to increase appetite, and leaves for intestinal disorders. Dogwood is also indicated for diabetes. Berries have a tonic, anti-inflammatory effect. They lower blood pressure, perfectly counteract incipient sclerosis.
The composition of these fruits includes a huge amount of substances useful for the body:
- vitamins A, C, group B;
- glucose and fructose;
- citric, malic and succinic acid;
- micro and macro elements.
But people suffering from gastritis with high acidity of gastric juice, gastrointestinal ulcers, frequent constipation are not recommended to eat dogwood. Application

Dogwood marinated with olives
Ingredients:
- fresh dogwood fruits - 2 kg;
- water - 600 ml;
- 9% vinegar essence - 200 ml;
- sugar - 5 tablespoons;
- table salt - 2 tablespoons;
- spices: allspice peas, cloves, tarragon, bay leaf.
Wash the dogwood berries and prick them in order to protect them from breaking the integrity during cooking.
Prepare a marinade solution of water, sugar, vinegar and salt in a saucepan, pour fruits into it, cook for about a quarter of an hour.
Sterilize liter jars, put 1 bay leaf, 1 tarragon branch, 3 clove buds and 3 allspice peas on the bottom of each. Pour the dogwood marinade into jars, cover with lids and place in a warm place. After a day, lower the jars to the underground or other cool place.

Ingredients:
- one and a half kilograms of dogwood berries;
- half a liter of water;
- one and a half tablespoons of table salt;
- 20 cloves;
- 3-4 bay leaves;
- 1 cup of sugar;
- half a glass of vinegar essence.
From water, sugar, salt and vinegar, you need to boil the marinade. Then wash the berries, pierce each. Put the fruits in a jar without sterilization, interspersed with cloves and bay leaves. Pour the finished marinade and put it in the refrigerator for one and a half to two weeks. You need to store the workpiece in the refrigerator.
Kizil in Azerbaijani
Ingredients:
- half a kilo of ripe dogwood berries;
- a glass of boiled water;
- 3-4 cloves;
- 4-5 peas of allspice;
- 2 bay leaves;
- half a teaspoon of fine table salt;
- a little citric acid;
- 2 tablespoons of sugar;
- 40 ml of vinegar essence;
- spices to taste.
Prepare the marinade first. To do this, pour water into a saucepan, add vinegar, sugar, salt, cloves, citric acid, laurel and pepper.
If desired, put other spices: basil, tarragon. Mix all ingredients well.
Peel the fruit from the stalks, wash with cool water. Prick the berries, and then pour them into the marinade. Put the pan on a small fire, bring to a boil and cook for a quarter of an hour.
Meanwhile, sterilize the jars. Pour the cooked dogwood into them, then carefully pour the hot marinade to the top. After that, hermetically close with a metal lid using seaming. After turning the jars over, put them overnight in a warm place and wrap them with a blanket. Then transfer to a cool dark place.
Simple preparation for the winter
Ingredients:
- 1 kg of dogwood fruits;
- water;
- 1 tablespoon of sugar;
- one and a half tablespoons of table salt;
- 80 ml 9% vinegar;
- 3-4 bay leaves, 5-6 cloves (for 1 jar).
Rinse and dry the dogwood. Fill jars three-quarters full with boiling water. Pierce the fruits in some places, then pour out the water from the jars and put the dogwood in them, interspersed with cloves and bay leaves. Put water on a small flame and dissolve salt and sugar in it. Add vinegar and pour into jars of berries. Seal the jars tightly and wrap them upside down.
