Selection and preparation of berries

Regardless of which dish will be prepared from strawberries, whole, undamaged fruits that have reached technical maturity should be used. They contain the maximum amount of useful substances. They have the highest pectin content, so berries in jams and compotes will keep their shape and maintain elasticity, and jams and jellies will have the necessary consistency.

The use of unripe strawberries is fraught with unenviable taste qualities - it may turn out to be sour, it will not have a characteristic berry aroma.

Some housewives, especially if the strawberries are cut or rubbed, tend to use slightly rotten or damaged fruits. They cut off the low-quality part of the berry, using the rest for cooking. However, such strawberries will provoke fermentation processes, so dishes from it cannot be called healthy. Blanks can deteriorate and even explode.

Harvesting berries involves sorting and washing them. If you plan to cook a dish of whole berries, you need to select those that are approximately the same size. In this case, they will cook at the same time and you will avoid a situation where larger berries remain unprepared, and small ones are boiled.

Strawberries quickly absorb moisture, so you need to wash it quickly. To do this, a small amount of berries is poured into a colander and washed under cool water. You should not turn them over with your hands, it is better to shake the colander slightly. After washing the first batch, you need to let the water drain, and only then spread the strawberries in one layer on a clean, dry towel. Now the next part of the berries is washed in a similar way.

If the strawberries are heavily soiled, you can put them in a basin, pour water and leave for 3-5 minutes. Berries will sink to the bottom, and rubbish, insects and leaves will float to the surface. After that, the berries are washed again with a colander.

It is important to let the strawberries dry completely before proceeding with further processing. Do not wash the berries in advance, they will turn sour. Clean strawberries should be freed from green tails, after washing their hands with soap and water.

To freeze a whole berry, you need to prepare it, clean it and put it on a cutting board or tray in one layer, putting the berries in the place where the stalk is attached. Then send them to freeze for an hour in the freezer.

After 60 minutes, the strawberries need to be taken out, sprinkled with sugar and sent back to the freezer until completely “hardened”. Transfer the finished berries to a bag for more ergonomic storage. For 2 kg of berries, 600-700 g of sugar is enough.

In the future, such strawberries can be eaten as an independent dish, as well as served with whipped cream, pancakes, used as a filler for cottage cheese, decoration for cakes and pastries. If desired, you can put the berries on compote, add to pastries or make jam.

Another option to keep strawberries fresh is to grind them with sugar and freeze them. To do this, the berries need to be mashed. You can use a sieve or scroll through a meat grinder. Grated strawberries will be a useful base for tea and fruit drinks during the flu and cold season, because the berry has a pronounced immunostimulating and anti-cold effect. The mass will turn out to be quite thick, it is convenient to make jelly and marmalade from it, add it to cocktails, soak biscuits. If you want to take it as a pie filling, it is better to thicken it first and reduce it a little.

Another option for preserving a fresh berry is to pour it with its own juice.This method involves filling the whole berry with sugar (the proportions are the same as for "live" jam). After a while, the berry will give juice, after which the strawberries must be separated from the juice, and the resulting syrup should be boiled over a fire. In some cases, water is added.

Boiled syrup should be poured over the berries and left in this form for 10-12 hours. Then drain the syrup and boil it again. Its quantity will increase, because the berries will give juice. Usually the procedure is repeated three times, with the last filling, the berries are boiled for 3-5 minutes on fire. Then the whole mass is distributed in sterile jars.

You can save strawberries for the winter by making jam from them. All the variety of recipes can be reduced to two groups - liquid and thick. Liquid jam involves minimal cooking. Thick in its consistency close to confiture. Since strawberries do not contain a lot of pectin, you have to resort to certain tricks to get a thicker consistency of jam.

By increasing the amount of sweetener and cooking time, it is possible to obtain a thick and viscous syrup. However, some housewives do not like this method, due to its laboriousness and the decrease in “usefulness” in the composition of berries.

To achieve density, but at the same time to avoid long-term digestion of the dessert, the addition of gelling components - gelatin, pectin, gelfix, agar-agar helps.

Candied fruit

Compound:

  • 500 g strawberries;

  • 500 g of granulated sugar;

Prepare berries. Boil syrup from water and sweetener, waiting for the sugar crystals to dissolve completely. Dip the berries in syrup and bring to a boil over high heat, then wait a couple more minutes. Remove the foam that appears and put the berries to boil again. Similarly, you need to do 5-6 times.

Then discard the berries on a sieve and allow excess liquid to drain. This will take about 3-5 hours. Strawberries will dry out a little by this time.

The next step is to evaporate the moisture from the berries. To do this, they are laid out in one layer, preventing sticking, on a baking sheet covered with parchment. Strawberries are dried at a temperature of 80-90 degrees for 2-3 hours. If you use an electric oven, you can lower the temperature to 60 degrees, but in this case, the drying time will be 3-5 hours. The oven door should not be tightly closed, it should be half open.

    After the specified time, press on the berries. If the juice from them no longer stands out, the candied fruits are almost ready. The baking sheet must be removed from the oven and left for a quarter of an hour at room conditions. Ready berries are then rolled in powder and put away for storage.

    It is better to keep them in a cool place in the closet, wrapped in a kraft bag.

    You can not boil strawberries in syrup, but fill it with them. That is, the cooking technology is similar to that used to prepare berries in their own juice. The difference lies in the fact that it is enough to keep strawberries in syrup for 15-20 minutes. Fill - up to 7 times. For 1 kg of berries, the same amount of sugar and 300 ml of water is taken. The process of drying berries in the oven is no different from that described above.

    Lemonade

    You can make lemonade with strawberries. You will get a refreshing drink that tastes good, but most importantly, its composition will be natural and known to you.Unlike the classic homemade lemonade based on oranges and lemons, the strawberry drink has a milder, less harsh taste.

    Ingredients:

    • a glass of strawberries;
    • 2.5 liters of pure water;
    • 2 lemons;
    • half a glass of sugar (you can adjust the sweetness of the drink to your taste);
    • a few sprigs of mint.

      First, the syrup is boiled. It is necessary to achieve the dissolution of the sweetener (by the way, you can also take a sugar substitute, however, a slightly noticeable bitterness will appear in the taste of the drink). At this time, scald the lemons with boiling water and, together with the peel, cut into medium-sized pieces.

      Put the citruses on the bottom of the pitcher and pour over the hot syrup. This will help infuse the latter with citrus notes and neutralize the bitterness of the lemon peels. The composition should be given 30-40 minutes to cool down. At this time, you can wash and peel the strawberries, and then cut them into slices. Such slices will give the lemonade its taste and smell and will look attractive in the drink.

      Add strawberries and mint to the cooled citrus syrup. It is better to rub the latter a little first in your hands to get an incredible fragrance. The last step is to add water (can be carbonated) to the composition of the drink. Its quantity is determined by taste. Lemonade can be served with ice or frozen strawberries.

      Marmalade

      Cooking strawberry marmalade at home does not require high culinary skills, while the home-made version, as reviews show, will be much tastier than the store counterpart. Needless to say, it is much more useful. To obtain the desired structure of the dessert, pectin or gelatin must be included in the marmalade.

      Ingredients:

      • 300 g strawberries;
      • 100 ml of water;
      • 4 tablespoons of sugar;
      • 2 teaspoons of agar agar.

        Prepared strawberries need to be beaten with a blender along with sugar and put on fire. As soon as the mass boils, you should reduce the intensity of the flame and simmer the mass for 5-7 minutes. Dilute agar-agar in cold water and pour into the berry mass.

        Bring to a boil, but do not boil. Then cover the tray with baking paper (it is better to oil it a little with vegetable oil) or cling film, and then pour the marmalade mass. Previously, the latter must be cooled to 50 degrees.

        Next, the marmalade needs to be given time to solidify, then remove from the mold, cut into pieces and roll in powdered sugar. To preserve the bright aroma of berries will allow a tablespoon of lemon juice added to the composition.

        Zephyr

        Delicate, airy and fragrant strawberry marshmallow of a pale pink hue will leave few indifferent. Agar-agar is used as a thickener, the strength of the gel must be at least 1000. It is unacceptable to replace it with gelatin, the dish will not work.

        Compound:

        • 300 g strawberries;
        • 150 ml of water;
        • 650 g of sugar;
        • 100 g of powdered sugar;
        • 9 g of agar-agar;
        • 1 egg white.

        Dilute agar-agar in cold water and leave to swell for half an hour or an hour. In the meantime, turn the strawberries into puree by rubbing through a sieve. From the specified number of berries, 300 g of puree is obtained. If it came out a little more, remove the excess.

        Warm the puree a little and cover with sugar using 200 g of sweetener. The crystals of the latter should completely dissolve. Separate the protein and beat a little with a fork. Put agar-agar on a slow fire and add the remaining sugar. When heated, it will turn into a viscous syrup. This will take approximately 5 minutes.

        Combine half of the protein mass with the cooled berry puree and beat until the mass brightens, then add the second half of the protein and continue the process for another 2 minutes.

          Remove agar-agar from heat (it should be hot, but no longer gurgling) and quickly add to the whipped mass. You need to pour closer to the walls of the mixer bowl, because when it hits the whisk, it will begin to thicken.

          Already from this moment, the agar-agar begins to solidify, so you should beat the mass a little more (just to mix the ingredients) and transfer it to a pastry bag. Cover a baking sheet or tray with parchment and use a nozzle to deposit small marshmallows. Give them 5-6 hours to solidify in room conditions.

          Morse

          Morse, unlike compote, does not involve the digestion of berries, which means it is a more healthy drink. For 2 liters of water you need to take 3 cups of berries. Add sugar to the water to taste and boil the syrup. Squeeze the juice from the berries, throw the cake into the syrup and boil for a couple of minutes, filter the liquid. When it cools down to room temperature, pour in the juice.

          A simple option is to use crushed berries that are poured with water. In order for strawberries to give more juice, they need to be covered with a small amount of sugar and wait a bit. If desired, the drink can be filtered.

          If you have prepared fresh strawberries mashed with sugar, then in winter it is enough to put 1-2 tablespoons of such a workpiece in a glass of water and mix.

          Soup

            As a rule, the juice is very concentrated, so it is usually diluted with water or a "softer" carrot juice before fresh consumption. You can pour the juice into ice cube trays and freeze. Such ice pieces can later be used for cocktails, fruit drinks or sauces.

            If you need to save the juice for the winter, then it should be heated over low heat for 10 minutes with the addition of sugar. For 1 liter of juice, 100 g of berries are required (a little more is possible). Next, the drink is distributed into sterile jars and sealed with metal lids.

            Sauce

            Sweet and juicy strawberries with a slight sourness are also suitable for making sauces, and, depending on the spices used, they can complement both sweet desserts and emphasize the taste of meat and fish.

            Strawberry sauce is called "cooli". Initially, it was prepared from vegetables, meat or crayfish. Today, however, coolies are berry-based sauces that can be kept fresh or cooked.

            To prepare it, you need to take:

            • 250 g strawberries;
            • 40 mg water;
            • a teaspoon of corn starch;
            • 6 g gelatin;
            • a tablespoon of sugar;
            • a few leaves of mint and basil.

              Punch the prepared strawberries with a blender with sugar and herbs. Now add starch, mix the composition thoroughly and put it on fire for 2-3 minutes. At this time, dilute the gelatin in warm water, mix it thoroughly to break up the lumps, and pour into the berry mass. Keep on fire until the first bubbles appear, but do not let the mass boil.

              Cool, serve in a gravy boat, garnished with a mint leaf. For more spice, you can add a pinch of allspice, cinnamon and cloves. If you refuse to use greens and spices and introduce more gelatin (10 g), then the sauce can be used for a layer of cakes.

              Since there are a lot of acids in strawberries, it is unacceptable to use metal utensils for its preparation. From this, the raw material will oxidize. The best container is enameled. If you plan to put candied fruits in baking, it is better to do this in the dough without pre-soaking the dried pieces.

              If you need to boil strawberry puree until cooked, then it is better to focus not on the time frame, but on the appearance of foam. It indicates the readiness of the berry. As a rule, it is removed, because during preservation it gives bitterness and can lead to damage to the blanks.
