Strawberries are the queen of summer among berries. Its sweet taste and delicate aroma are familiar to everyone without exception. Today, there are many varieties of strawberries, thanks to which you can enjoy juicy ripe berries all summer.

The only disadvantage of this berry is a relatively short shelf life. Therefore, strawberries are often consumed fresh, canned and frozen.

Recipes

There are many types of strawberry preparation. Compote is an original and practical way available to everyone.

canned compote

You will need scarlet, juicy, ripe, but dense berries. They must hold their shape well in order to be preserved during cooking. First of all, strawberries need to be sorted out, leaving only good, intact specimens, remove the "tails" and rinse thoroughly. It is very important not to injure the pulp of the berries during the washing process. It is best to do this in batches, washing them in cold water with a colander.

For 10 half-liter jars you will need:

  • 3 kg of berries;
  • 2 liters of water;
  • 600 g of sugar.

Cooking

Strawberries are poured into pre-sterilized clean containers, filling no more than 2/3 of the volume. Next, you need to boil water with sugar until a sweet syrup is formed.Without cooling the syrup, you need to strain through cheesecloth and can be poured into jars.

Banks are tightly closed with clean tin lids. You can use special clamps, as under pressure they often break. If there are no clamps at hand, you can simply cover with washed lids.

The next step is sterilization. To do this, you need a wide pot of hot water, on the bottom of which a grate or a circle of wood is lowered, necessary so that the jars do not crack under the influence of high temperature.

The pot with jars is sterilized for 10 minutes over medium heat. After that, they should be taken out, corked, wrapped and put to cool on a flat surface, turned upside down.

Strawberry compote without sterilization

For one 3-liter jar you will need:

  • 800 g strawberries;
  • 2.5 liters of water;
  • 1-1.5 st. Sahara.

Cooking

Strawberries need to be prepared, sorted, processed and washed under running cold water. Banks are filled with berries for 1/5 of the volume. Place a pot of clean water on the stove and bring to a boil. Hot water is carefully poured over the berries. After that, the neck of the jars is covered with clean lids and left alone for 15-20 minutes so that the berries are properly soaked and the water cools down.

Next, the settled water is poured back into the pan, put on the stove and brought to a boil. Add sugar according to the recipe and cook until it is completely dissolved. Sweet syrup is poured into jars and rolled up. After the jars must be turned upside down and left to cool under a warm blanket.

Strawberry compote with orange

For one 3-liter jar you will need:

  • 700 grams of strawberries;
  • 300 grams of sugar;
  • water.

Cooking

Fruits need to be washed, strawberries processed and poured into sterilized jars.Cut the orange into thin slices and put in jars. Next, the contents of the jars are poured with boiling water and left to soak for about half an hour. After the water is carefully poured into a saucepan, sugar is added and put on fire. You need to boil for 5 minutes until a syrup is formed. Sugar should be completely dissolved. The resulting mixture is poured back into the jars and sealed. As usual, the jars are wrapped and sent to cool in a dark place, exposing them upside down.

If desired, fresh strawberry compote can be prepared by adding other berries for taste. For example, a particularly sweet and original taste of the drink is obtained by adding cherries, raspberries, cherries or blueberries.

Many people know that strawberries go great with rhubarb. Compote of these ingredients has already become a real classic. It quenches thirst well and saturates the body with vitamins.

Strawberry compote in a slow cooker

The preparation of compote in this way is slightly different from the classic one. It is best to cook with the lid open - the water will not boil away so much, and the drink will be more transparent.

You will need:

  • 300 grams of strawberries;
  • 100 grams of sugar;
  • 2 liters of water.

This is a fairly quick and affordable recipe for making fresh compote. Berries need to be sorted, processed and washed. Strawberries are poured into a multicooker bowl, sugar is added and poured with water. For cooking compote, the “Stew” or “Milk porridge” mode is suitable, and it will take about one hour to prepare the drink.

After the set time has elapsed, the multicooker lid can be lifted, but do not rush to pour the drink. It should cool down and properly infuse. You can cook from fresh berries, and in winter it is permissible to use frozen strawberries.With proper freezing, all useful substances remain in the berries, moreover, the taste of such a compote is no worse.

Compote can be served warm or chilled, with or without berries.

How to use

The finished canned drink is usually served on the table without berries, having previously filtered it, since strawberries lose their aesthetic appearance when boiled. However, the taste remains with her and canned berries are no less useful. In summer, the drink can be drunk immediately while still warm, or you can drink it chilled. Sometimes mint, ice cubes, lime are added to it - it turns out a refreshing cocktail.

For a more original presentation, you can experiment with lemon and orange juice, ginger root, vanilla extract. In any case, this will not spoil the taste of compote, but, on the contrary, will add zest.

Helpful Hints

In the conservation of compote, as in any business, there are some nuances:

  • berries for compote must be selected whole without a single defect with dense pulp, but at the same time they must fully ripen;
  • special attention should be paid to washing the berries. This must be done carefully, trying not to suppress them;
  • Strawberries are best taken in medium size. Large berries can be cut in half;
  • if you fill the berries with cold water, the compote will turn out to be a bright color. And when pouring hot, the taste of the drink will be more saturated, but the berries will boil;
  • a slice of lemon or a small pinch of citric acid makes the color of the drink brighter;
  • when cooking compote, remember that during the cooking process, strawberries take away some of the sweetness of sugar. In order for the drink to be sweet enough, it is recommended to stick to the recipe;
  • If desired, instead of sugar, you can take a sweetener or honey. It is also allowed to add all kinds of spices to the drink;
  • you need to prepare compote only from fresh berries;
  • it is equally important to sterilize the jars with high quality for about a quarter of an hour in the oven or for a couple.
