Bird cherry compote for the winter: simple recipes

Recipes
Perhaps the simplest option is a bird cherry drink without sterilization. For him, the painstaking selection of berries, as well as their sterility, is important. As a rule, the drink is prepared in three-liter jars. You will need the following ingredients:
- fruits of red bird cherry (400 grams);
- citric acid (1 teaspoon) or natural citrus juice;
- granulated sugar (300 grams);
- 2.5 liters of water.
The berries are thoroughly washed and dried. We put it in a clean (sterile) jar. To prepare the filling, take a saucepan, fill it with water and add sugar. Boil for about three minutes. Add citric acid to the berries and pour the syrup. Roll up with a sterile lid, turn upside down and let cool.
Bird cherry compote can be varied, adding various fruits to it. For example, an apple will bring a pleasant sourness. Cooking a fragrant drink is not difficult. To prepare a mixed drink, we need:
- dark bird cherry (300-500 grams);
- 3 liters of water;
- sugar (300-400 grams);
- ripe apples (500 grams).
We thoroughly wash the fruits, remove the remaining moisture and cut them coarsely. We fall asleep in sterile jars along with bird cherry and pour boiling water.We withstand 10-12 minutes, pouring the infusion into the pan. Pour sugar, citric acid (0.5 tsp) into the infusion and put on fire. Boil for 2-4 minutes, then pour the ingredients. We roll up the jars, wrap them with a blanket and leave to cool completely.
Another great option would be compote of bird cherry with wild rose. It will turn out not only bright and saturated, but also very useful. The drink recipe is quite simple.
Thoroughly wash the rose hips (250 grams) and bird cherry (450 grams). We lower them into a pot of boiling water (3 liters), after adding sugar (250 grams). We remove the liquid from the stove and leave for 6-7 hours. This time is enough for the berries to soak in the syrup. Then we spread the fruits in sterile jars. Cook the syrup for 5-7 minutes. Pour over the berries and seal with a lid. Turn the container upside down, cover with a dense material and leave to cool completely.
Experienced chefs advise adding to mixed compotes fragrant spices. We are talking about vanilla, cinnamon or cloves.
A small piece of ginger will add a piquant zest to the bird cherry drink. The aroma will be enhanced by lemon or orange zest.
If a person catches a cold, then doctors recommend him to use cherry compote with raspberries. This drink activates the protective properties of the body and helps fight viruses. Prepare it for the winter as follows:
- processed berries of bird cherry and raspberry (300-500 grams) put in sterilized jars and pour boiling water;
- stand for 12 minutes, pour the infusion into the pan, adding sugar and lemon juice;
- cook for 5-7 minutes;
- fill the berries with syrup and cork the lid;
- cool upside down under a blanket.
It has a special unique taste mix of bird cherry, cherry, sea buckthorn and wild rose. Vitamin assorted will appeal to all households without exception. This drink is easy to make. Have to take:
- fruits of bird cherry and wild rose (200-300 grams);
- cherries (250 grams);
- sea buckthorn (150 grams);
- granulated sugar (1 cup);
- 2 liters of water.
Wash the berries thoroughly and remove the seeds. Pour sugar into boiling water and cook syrup. We process the berries with steam (blanch) for 3-5 minutes. Then we lay them out in sterilized jars and fill them with syrup. We roll up and wrap containers with compote.
In addition to fresh berries, bird cherry compote can be cooked from dried fruits directly in the winter. Its taste, of course, will be inferior to a drink made from fresh bird cherry. However, the berry mass can be supplemented with fresh apples or pears. Cooking it on a frosty morning is not difficult. It is enough just to cover the dried berry with sugar, pour water and cook over low heat for 15-20 minutes. Then remove from heat and let stand for 5-7 hours.
Storage rules
Bird cherry compote, even prepared without sterilization, will not deteriorate for several years in a row. However, six months later, the bones of the berries begin to secrete hydrocyanic acid, which can harm the human body. Therefore, it is better not to prepare a lot of cans for future use. It is better to drink prepared compote during the winter season, and make fresh next year. It will be better for the body.
Banks should be kept in a dark cool place. It can be a pantry, cellar, garage, lockers on the loggia.
After the compote has been opened, it must be stored in the refrigerator for 2-3 days.
