If you know certain rules, stock up on the right ingredients, then you can pamper your loved ones with a delicious, natural and healthy drink all year round. It is cooked for a short time, it will take from 3 to 30 minutes in time, the composition of the compote may be different, but the technology for its preparation is the same.

General rules for cooking

Preparing for cooking compote, you need to choose the right dishes. If we talk about volume, then everything is simple: if you cook for a large company, you will need a large pot, if for 1-2 people or with the expectation that there will be a fresh portion for every day, then you can take smaller utensils.

Dishes with a spout are suitable in shape, so it will be easier to pour the drink, and if a mesh is also attached to it, this is ideal for making compote. Taking into account the material, it is recommended to cook compote in enameled dishes, it is also possible to store a drink in the refrigerator for several days, which cannot be done in aluminum. With prolonged interaction with fruits, aluminum will undergo an oxidation process.

Compote is prepared both from fresh berries, fruits, vegetables, and from frozen ones; tasty and healthy it is obtained from dried fruits. The cooking process will vary depending on the ingredients, but there are general rules.

  • First you need to pour water into the pan and put on fire. Fruits, berries fall asleep in boiling water.
  • To prepare 3 liters of compote, you will need 2.5 liters of liquid, 0.5 kilograms of fruits, at least 100 g of sugar (adjustable to taste).
  • Sugar is not recommended to fall asleep immediately, since the main sweetness can be absorbed by the ingredients, and the drink itself will remain sour. You can sweeten compote at the end of cooking by making syrup. Another way is to dissolve the granulated sugar directly in the pan after removing it from the heat. Instead of sugar, you can use its substitute, as well as honey, fructose, and another sweetener.
  • The taste of berries and fruits in the compote will be better revealed, and they will give up their sweetness to the drink, if you first add a pinch of salt to boiling water, and then pour the fruits into the pan.
  • Compote will become more saturated if the fruit is cooked with bones. For a brighter color, add a few drops of lemon juice.
  • Frozen fruits and berries do not defrost. After taking them out of the freezer, after 10 minutes you can use. The cooking time in this case is increased by 5 minutes.
  • Compote should not boil much, it is boiled over low heat, bringing to a state of light bubbling.

How much time to cook?

The statement that compote is cooked for exactly 15 minutes is not true. Boiling time depends on the ingredients. It is enough for one berry and three minutes to stay on the stove, so that after boiling, after insisting, give all the aroma and taste to the drink, other fruits - 30-40 minutes.

The latter include apples and pears, and here everything depends on the variety and the degree of their ripeness. Each component has its own specific cooking time, but, as a rule, it is not recommended to leave dishes with compote on fire for more than half an hour. You can cook it for a long time, only it will not become richer from this, but will only lose its beneficial properties and taste.

Apricots, plums and peaches are boiled for 15-20 minutes, dried fruits - 10-15 minutes, citrus fruits are enough for 10 minutes to flavor the drink with their juice. Compote from quickly boiled fruits is boiled for 5 to 7 minutes. You can determine the readiness of the drink by the softness of the fruit.

Selection and preparation of ingredients

Fruits are washed in warm water before cooking, including frozen ones. If you want to prepare a concentrated drink, then it is better to lay the base immediately in a saucepan and pour cold water over it. In this case, it is better to use a 2: 1 ratio in the water-fruit ratio, that is, take 2 parts of the liquid and 1 part of the fruit. Here you should not be greedy and take a smaller amount, otherwise you will just get a flavored drink.

For daily use, many people prefer to make compotes from fresh berries; it is good to combine sweet and sour fruits here. The cooking process includes several steps.

  • The berries are thoroughly washed and cleaned of leaves and additional debris.
  • A pot of water (recommended enamelware of at least 3 liters) is put on fire, the liquid is brought to a boil.
  • The fruits are laid out in a saucepan, sugar is added. For additional flavor, mint, cloves, raspberry, cherry, lemon leaves are added to taste.
  • The compote is covered with a lid and left to cook for 10 minutes.
  • The drink is served chilled.

If there is a desire to cook fruit compote, the skin does not need to be removed from them. It contains a lot of useful elements that, when brewed, will fall into the liquid and enrich the composition of the drink. Fruits should be chosen only ripe and of high quality, the taste of the finished juice depends on it.

The assumption that all fruits are amenable to heat treatment is incorrect.If at least one instance with rot gets into the pan, the taste of the entire compote will be spoiled.

Recipes

Compote is made from almost all berries and fruits, but most of all - from raspberries, apples, cherries, plums, peaches, apricots, currants, grapes. Sometimes they experiment and prepare a homemade drink from jam, dried rose hips, frozen gooseberries, sea buckthorn and even figs.

The most delicious compote will turn out if it is cooked from one group of products, for example, figs to use with dried fruits or dried pears and dates. In this case, you can do without sugar, as the drink will turn out sweet. You can brew a drink with a pleasant sourness from wild rose, barberry, dogwood and, of course, cherries.

A delicious drink will be from a combination of only berry fruits. Unusual compotes are obtained from dried bananas, quinces and peaches. Compote can be cooked without sugar or with syrup. You can experiment by combining different fruits, but then you need to take into account the processing time of the ingredients.

From compote mixture

Everyone can determine the ideal combination of a compote mixture for themselves, for this, of course, you will need to experiment. And here, it seems, are the most interesting options that everyone will like (proportions are given for 4 liters of liquid):

  • take prunes and dried apricots, 50 grams each, pears and apples - 100 and 200 g, respectively;
  • mix 100 grams of bananas and quince, 200 g of dried apricot (dried apricots);
  • an unusual drink is obtained from figs (300 g) and rose hips (100 g).

An important point - we choose high-quality dried fruits. The taste of the drink and the amount of added sugar depend on what is included in the set of dried fruits.For example, a traditional compote mixture always contains dried pears, apples, apricots, and raisins. The pear will dominate in this combination; many have known this taste since childhood.

Sugar for such a drink will need a little. If you want a sour broth, then you need to use prunes, but keep in mind that it will “clog” the rest of the fruit, so 2-4 prunes will give you the right taste.

A handful of dry rose hips fortifies any drink.

Usually, dried fruits are not pre-soaked in water - it is enough to rinse them in a colander and put them to boil immediately with water. At first, the fire is made larger, then its intensity is reduced. After 30 minutes sugar is added and after 5 minutes the stove is turned off.

Before adding sugar, it is advisable to try the decoction. Dried fruits give their sugar content to the liquid well, so add white sand further according to your taste preferences. Dried fruits compote must be infused for at least half an hour, then it is filtered and filled with a decanter. Some prefer not to strain the resulting decoction. By the way, this drink is served both hot and cold.

Dried fruit compote is preferable to cook in winter. For the summer season, compote mixture is collected directly from bushes and trees. The combination of apricot, raspberry, cherry and currant will not only make your day cheerful, but also saturate the body with vitamins. Cooking such a composition should be no more than 7-10 minutes.

From cherry plum

In terms of taste, cherry plum (aka tkemali and cherry plum) is similar to homemade plums, compote from these fruits is obtained with sourness. For 4 servings of compote you will need:

  • 1 kilogram of cherry plum berries;
  • 4 tablespoons of granulated sugar;
  • at least 2 liters of water;
  • 30-50 g of lemon balm.

In this version, sugar can be added after boiling water, then send the washed cherry plum to the pan, keep it on fire for no more than 4 minutes, put the lemon balm, then let the drink brew. Strain it before serving.

Cherry

It is no coincidence that cherry compote is called the king of drinks in the world. Bright in color, rich and self-sufficient in taste, powerful in terms of the influx of strength and energy after its use, it conquered mankind with its simplicity and ease of preparation. You can enhance its taste with a sprig of mint.

The traditional recipe for cherry compote includes: a glass of sugar and cherries, 2.5 liters of water. It is cooked like compotes from other berries - when the cherries burst slightly, the cooking is stopped and left to infuse. You can prepare a concentrated cherry drink, in which case more cherries are added, and when consumed, it is diluted with mineral water. A pleasant combination is obtained from cherries and raspberries.

from melon

Melon compote will turn out fragrant if you use ripe juicy pulp. It will take 500-600 g of melon (one small fruit) per one and a half liters of liquid and 100 g of granulated sugar. Add citric acid or fresh lemon juice to taste. Cooking rules:

  • melon is peeled and seeds are removed;
  • cut the pulp into small squares;
  • melon slices are transferred to a container for cooking and poured with water;
  • add citric acid and sugar;
  • the composition is put to boil, from the moment of boiling, boil for 2 minutes and remove from heat.

After cooling, the pieces of melon settle to the bottom, and the drink is poured into glasses. In summer it is served with ice.

Blackberry

If you want a drink rich in color, aroma and taste, stock up on blackberries - and you will get a self-sufficient compote.It can be drunk both cold and hot. To preserve vitamins, blackberries are not boiled.

Water with sugar (to taste) is brought to a boil and boiled for several minutes, then blackberries are added to boiling water in which sugar is dissolved and left to infuse until completely cooled.

After cooling, the compote can be filtered or thrown through a metal sieve to separate the berries.

From hawthorn

For the preparation of healthy hawthorn compote, only ripe, but not overripe fruits are suitable. They are thoroughly washed, and then painstaking work begins: it is necessary to separate the fruits from the seeds. To do this, with a sharp knife on a cutting board, each bead is cut and cleaned, washed again under running water in a colander.

After that, they begin to boil the syrup. To prepare it you will need:

  • 450 g sugar;
  • 650 milliliters of purified water.

In a saucepan of at least 2 liters, sugar is mixed with water, put the container on a large fire, the mixture is constantly stirred with a wooden spatula. Sugar must completely dissolve, the syrup is brought to 85 degrees, peeled hawthorn is added to it, and removed from heat. In this form, leave the mixture to infuse for at least 10 hours.

Strain before serving, can be diluted with mineral water.

From oranges

Citrus fruits are always on sale, so you can cook compotes from oranges all year round. Ripe and sweet fruits are best suited. To prepare the simplest orange compote, you will need water, fruit and granulated sugar. Orange is cut into slices, added to the water in a saucepan and boiled for a short time after boiling. And you can first make syrup from chopped zest, then pour slices of oranges with citrus syrup.

You can sweeten such a compote with granulated sugar or honey.Cinnamon, nutmeg, vanilla, and other confectionery seasonings go well with an orange drink. Here is one of the recipes for orange compote: take 1-2 orange ripe fruits (by weight - within 240 g), 24 teaspoons of sugar (based on one serving of 3 tsp) and 1 liter 800 ml of water.

How to cook:

  • carefully remove the peel from the washed orange, after making 8 cuts on it;
  • the zest is poured with boiling water and left to infuse for 3-5 minutes;
  • drain the zest infusion, mix it with sugar and put on fire, bring to a boil;
  • add the zest to the boiling syrup, continue to cook for three minutes;
  • while the syrup with zest is cooling, orange slices are cut into thin plates;
  • distribute pieces of fruit into 8 glasses, add compote zest to each and pour the liquid itself;
  • served to the table.

There are many recipes for orange compote; other fruits are added to it. But then you should take into account the cooking time of all the ingredients and cook, if necessary, in stages. The pulp of an orange does not need a long heat treatment.

Compotes are natural drinks, which is why their popularity is so high.. They can be prepared for the winter, you can cook for several days or daily. They are useful for children, give freshness and fill the body of an adult with life-giving moisture.
