How to cook cereals?

Cereals, along with vegetables, meat and fish, are an indispensable part of the diet of most people. But the passion for semi-finished products and other fashion trends lead to the fact that many people forget how to cook cereals, what are the nuances of the technology. It is very important to solve this problem, because the slightest mistake can lead to serious disappointment (literally and figuratively).

Features of cooking buckwheat

If the goal is to cook crumbly porridge from buckwheat, you need to take twice as much water. Buckwheat is poured into a cold liquid and boiled under the lid over maximum heat. As soon as the water in the pan begins to boil, you need to reduce the flame to a moderate level. After 15-20 minutes, all the water will be completely absorbed into the cereal. But this is not the end of the work - you need to insist the dish under the lid for ½ hour.

A slightly different approach is practiced when it is necessary to cook porridge from buckwheat. It is boiled using 300 grams of water per 200 grams of cereal. An alternative approach involves soaking the product in identical proportions of boiling water overnight under a lid. A very useful option is the effect of "languishing", which is achieved by wrapping the container with porridge with a warm cloth.

Adding butter is optional.

Making fluffy rice

This dish is prepared not for porridge, but as a salad or side dish. The cooking time is 1/3 hour. Would need:

  • pour cereal with water in a ratio of 1: 1.5;
  • stir;
  • boil under a lid over a powerful fire;
  • boil on medium heat for 7 minutes;
  • cook the rest of the time on a low flame.

Next, rice porridge must be kept closed for about 20 minutes, otherwise it will not reach the required proportions. If milk rice porridge is being prepared, the process begins in exactly the same way: they take identical shares of water and cereals and only pour milk in 5 minutes. Attention: you need to take the same amount of milk as water. Immediately after this, the dish is stirred and cooked at medium intensity of heating.

We work with millet

It is very important for any cooks to be able to work with millet groats. Cooking it correctly means washing it with great diligence. Water is changed 5, and sometimes 6 times, achieving perfect transparency. Cooking itself involves the use of a triple mass of water and covering the pan with a lid. First, the dish must be boiled, providing a strong fire, and only then the heating is weakened, keeping it at the same level from 40 to 45 minutes (readiness is assessed by samples).

Capricious semolina

This dish is called “capricious” for a reason: it must be cooked under constant supervision. This is due to the fact that at the very beginning the milk can pour out of the pan. Later, such an event becomes less likely, but then you have to stir the porridge, otherwise it will stick together into lumps. The preparation of semolina porridge of moderate density requires the use of 180 grams of cereal per 1 liter of water. The choice of a particular technique depends on personal preferences, the available components and free time.

Dietary recipes involve cooking semolina on water, but milk porridges are still classics. To avoid lumps, it is recommended to do this:

  • milk is poured into boiled salted and sweetened water;
  • grits are poured into a thin strip, while the liquid is continuously stirred;
  • when the porridge boils, reduce the heat so that it does not gurgle strongly;
  • then cooking (with stirring) lasts from 5 to 7 minutes;
  • the dish is kept under the lid and only after that they are brought to the table.

About containers

Not all people are well aware of the dishes in which porridge is to be cooked. The best option, regardless of the specific type of dish, is a thick-walled pan with a powerful bottom. It is very useful when a heavy lid is included. But the size is significantly different: semolina and rice porridge are cooked mainly in small containers, and barley and buckwheat are most often boiled in large portions.

Combinations

Many are interested in whether it is possible to cook various cereals together or not. This is important not only for lovers of culinary experiments. The fact is that combinations allow you to get the maximum benefit from various products, diversify your diet. And the answer is definitely yes. Moreover, mixed porridges are increasingly being cooked. Rice is compatible with almost all cereals, since it has a mild taste that does not interrupt other components.

Rice groats are often combined with buckwheat, millet. Of the exotic options, a mixture of quinoa with basmati is becoming more and more popular. In stores, you can also find various combinations of grains and legumes. As for the old recipes, there is also something to please yourself. A striking example is the so-called Guryev porridge. But on conventional stoves it is difficult to choose a mode that would ensure optimal preparation of several layers of heterogeneous cereals at once.

It is much easier to do this in Russian ovens, but you can also succeed in the kitchen of a city apartment. The main thing is not to get upset after several failures: this is inevitable when choosing the optimal method.

The preparation of cereals in a double boiler also has its own characteristics.There, they cook not so much porridge as side dishes for fish and meat dishes. Only having mastered the preparation of such simple options, you can already approach culinary masterpieces, in which vegetables and even mushrooms are introduced. If you already have experience using a double boiler for processing vegetables and meat, working with any cereals will not create difficulties.
