Lemon Syrup Tips
Lemon is a beautiful and fragrant fruit that has long been loved by the inhabitants of Russia. Many people like to add it to tea. At the same time, lemon is a seasonal and perishable product. If you make syrup from it, then you can save all its taste, and then add the syrup itself not only to tea, but also to ice cream, confectionery, cocktails and other desserts.

On the shelves of stores you can see ready-made syrup in different containers and from different manufacturers. However, often it is just a very sweet product, in which the taste of lemon is not very pronounced. In addition, there are many food additives and preservatives in such a product. As you know, not the first freshness products are often allowed for processing.
Making good lemon syrup at home is not that difficult. An important condition is to take high-quality fruits for cooking. They must be fresh, have a smooth elastic peel. Defects, dried or rotten places on fruits are unacceptable. The use of wilted and dried fruits will spoil the taste of the syrup, and its shelf life may also be reduced.
Fruits must be thoroughly washed under running warm water. Of course, you don’t need to be too zealous and use detergents, but it is highly desirable to use a brush when washing - according to many recipes, the fruits are used with the peel, since the rich taste with a characteristic aroma depends on the zest.
It should be borne in mind that in some varieties of lemon, the zest has a bitter taste, and therefore the syrup will also have it. This can be avoided by digesting the fruit.You can also remove a thin layer of zest, as the white skin under the skin itself gives a strong bitterness.
Ways
There are many ways to make syrup, but at the heart of any recipe, the main ingredients are lemons, sugar, and water.
One simple recipe calls for one lemon, a cup of sugar and 3/4 cup of water.
- The washed lemon is cut into two parts and the juice is squeezed into a separate container.
- Now the lemon, cut into small pieces and poured with hot water, is put on low heat.
- After 5-10 minutes, the broth is removed from the heat, allowed to brew for 35-40 minutes and filtered.
- Sugar is added to the broth, brought to a boil. Then the fire must be reduced and continue boiling for 20 minutes.
- The resulting liquid is removed from the heat, juice is added to it, and brought to a boil again.
- When the syrup has cooled, it is poured into a storage container and corked. Choose a cool place for storage.
For lemons with bitter zest, there is another recipe. Using it, you can quickly cope with the task.
To prepare the syrup, you will need 10-12 fruits, 6-7 tablespoons of sugar and 100 grams of water.
Water with sugar is put on fire. It is not necessary to bring to a boil, just dissolve the sugar. When the sugar melts, you need to add the previously squeezed juice from the lemons and mix well. If pieces of lemon or zest get in, the composition is filtered, and the product is ready for use.
Wonderful syrups are obtained by adding other ingredients to the base products.
For example, you can achieve an exquisite taste if you prepare a syrup with honey. In this case, no water is needed.
Take 5-6 fruits, cut them into half rings and place in a glass jar. Pour honey over lemons - 200 ml will be enough.Put the jar of honey and lemons in the refrigerator and wait 3 days. During this period, even very thick honey will melt and mix with lemon juice without your participation. Then the syrup is filtered and poured into another container.

Cooked lemon syrup will perfectly complement any dessert dish. No less wonderful drinks you can treat friends or relatives who came to visit you.
By adding syrup to plain or mineral water with sparkling water, you will get an excellent lemonade for children.
For adults, prepare a cocktail. For example, you can easily and quickly prepare an aperitif. Mix 15 ml of vodka, Amaretto liqueur and syrup. It is recommended to use a shaker.
Rum-based cocktails are especially good, as it has a wonderful aroma. To prepare one of them, take 20 ml of rum, 15 ml of any liquor, 90 ml of pineapple juice and 30 ml of lemon syrup. Serve with ice.
How to store?
Terms and methods of storage depend on the method of preparation.
If the syrup has not been boiled, then store it in the refrigerator for 3-4 weeks.
Boiled is suitable for canning for the winter. To do this, boiling syrup must be poured into sterile bottles and tightly closed.
Also a good way to store it is to freeze the syrup in small molds. In this form, it is useful for cocktails.
