How to cook caramelized onions?
Many will be surprised to hear about such a phenomenon as caramelized onions. We are accustomed to caramel candies, waffles and other desserts, and therefore it is difficult to imagine this bitter product in a state of caramelization. However, not enough attention is paid to such a dish because not everyone is ready to take a responsible approach to the caramelization process. To properly caramelize onions, you need to follow some rules.
What it is?
The process of caramelization is the oxidation of sugar under the influence of high temperatures. The crystals of the sweet substance are destroyed, the liquid evaporates, the substance acquires a dark brown color and a stretchy texture, which is called caramel.
Sugar is still found in fruits and vegetables, and therefore these products can also be subjected to the caramelization process. When natural sugar is released during heating, vegetables and fruits also turn brown.
Onion is a fairly popular product to which this process is widely applied, because the sugar contained in its composition exceeds the amount of the same substance found in an apple.
Features of caramelization
For caramelization, only two products are required - onion and sugar. Usually, reed sand is recommended for use, but in its absence, ordinary white sand can also be used. In the process of heat treatment, the sand acquires a thick consistency, which holds the juice inside the vegetable and gives it a sweetish aftertaste.
Do not rush the heating procedure by turning on a strong fire, otherwise only burnt onions will remain in the pan. This is a slow process, taking at least half an hour. Only then will the cook get a caramel-nut onion.

- melt butter in a pan or add vegetable oil: it is important not to overdo it with butter, but a small amount will negatively affect the caramelization process - you need an average portion of butter, for example, a tablespoon per onion;
- put the chopped onion in the pan and mix;
- add sugar, its amount is determined by the type of vegetable: usually you need a tablespoon per head of spicy onion, and if the variety is medium spicy, then the amount of sand needs to be reduced;
- fry over low heat for about 25 minutes, stirring with a spatula, but infrequently, otherwise you may not wait until the product turns brown;
- if the vegetable begins to stick to the bottom, you can add a little water;
- the readiness of the caramelized onion can be judged by its color - it has a dark brown color.
