Camelina oil: composition, properties and applications

Camelina oil: composition, properties and applications

A lot is known about the beneficial properties of vegetable oils. The most popular are olive, linseed, pumpkin, mustard. Camelina oil is not so common, although in the recent past it was used for medicinal purposes, added to various dishes and salads, and used as cosmetics.

What is it and what is it made of?

Camelina oil is obtained from the seeds of a plant that is found almost everywhere. This is a saffron seed. It can often be seen on the side of the road, in abandoned parks and squares. It is a plant with thin leaves. During the flowering period, this oilseed crop is covered with small yellow flowers, sometimes decorating entire fields. When the plant stops flowering, pods remain in place of the inflorescences, inside of which there are small seeds of a dark orange color. It is because of the shade of these seeds that this culture got its name.

Camelina oil is usually produced by cold or hot pressing. By processing raw materials by cold pressing, about 20% of the oil can be obtained from the seeds, while all the valuable substances from the plant get into it. The product obtained in this way is considered the most useful. In the process of processing, it becomes yellow-green. Unrefined oil has a pleasant taste with a slightly noticeable bitterness, a characteristic smell.

After the seeds have been cold-pressed, another treatment is performed. The raw material is heated and pressed again. After such pressing, it is additionally possible to obtain up to 8% camelina oil. When squeezing seeds in this way, a large number of valuable substances are destroyed, and oxidation also occurs. Such oil must be purified from impurities, so it is refined. The refined product has a less saturated taste and aroma, acquires a noticeable green tint. By consistency, refined oil is less fatty than unrefined.

If the oil obtained by cold pressing is recommended to be taken as a way of healing, then the refined product is usually used only in cooking. On it you can fry, cook cold dishes, use for baking. The smell of such a product is neutral, it does not affect the taste of dishes.

Unrefined oil is best used for vegetable salads, it is also added to sauces, various gravies. The presence of a characteristic smell in this product will add an original note to any dish and make it more piquant. Squeeze from camelina seeds is not recommended to be heated, since exposure to high temperature contributes to the destruction of vitamins and polyunsaturated acids.

Store the refined product in a closed form at temperatures up to 20 degrees Celsius for up to 2 years. When the bottle is opened, the contents should be used within two weeks. If, after opening, the oil is stored in the refrigerator, its service life increases to a month. But this product is not recommended to be frozen, because in the process of freezing, useful substances are lost. Unrefined oil is stored for 10 months. If it is made by cold pressing, then its shelf life is 4 months.
