The color of mountain honey varies from pale yellow, sunny or straw to rich shades of gold and copper with reddish, almost brown streaks. Thanks to wild herbs, there will always be a slight bitterness in it. By this astringency, it is distinguished from other varieties of honey, for example, linden, flower or buckwheat.

- Altaic. The special climate of the Altai Mountains has served as a favorite place for beekeepers since ancient times. This region has a long tradition of beekeeping, and every year it exports impressive volumes of various varieties of honey. Of particular value are varieties collected in highland areas, where the environment is as clean as possible, and the aroma and taste of coniferous plants is added to the variety of herbs. Coniferous notes are a distinctive feature of Altai honey. The main characteristics also include an unusual color - light amber with a greenish tint (again, thanks to coniferous extracts). Altai honey syrup slowly crystallizes, has a thick viscous structure. After crystallization, it acquires a whitish hue and becomes fine-grained.
- Caucasian. In the regions of Russia, apiary farms are located in large numbers on the slopes of the mountains of the North Caucasus. Since the times of the USSR, the apiaries of the Stavropol Territory and the Karachay-Cherkess Republic have been famous. Wild grasses, abundantly covering the slopes of the southern mountains, are a favorite place for bees from early spring to late autumn.At an altitude of up to a thousand meters above sea level, bees collect the nectar of coltsfoot, St. John's wort, thyme, motherwort and sage. Honey nectar has a golden color and an unusual sweet aroma that intensifies when heated.
- Black Sea. This region is famous for its chestnut nectar, which is obtained from the apiaries of the Black Sea coast and the mountain slopes of Crimea. The predominance of chestnut groves contributes to the production of a unique variety of honey, which has an analogue only in the south of France. Pollen of flowering chestnut determines the subsequent taste and color of the product - dark molasses with a burgundy tint has a bitter aftertaste, has a lot of useful properties and is in particular demand among honey gourmets.
- Kyrgyz. The former Soviet republic during the Soviet era ranked third after Russia and Ukraine in terms of the amount of collected honey product. In our time, Kyrgyzstan is again reaching its previous levels and increasing exports around the world. In 2013 at the International Congress in Kyiv, and then in 2015 in South Korea, classic honey from Kyrgyzstan took several prizes at once, taking gold and silver in different categories. At-Bashi white honey, collected on the slopes of mountains in the northern part of the republic, was especially noted. The main honey plant for this variety is the sainfoin plant, which has a wide range of medicinal properties and fragrant pink flowers that attract bees. At-Bashinsky nectar has gained popularity all over the world and has become a new brand of Kyrgyzstan.

The label on the jar must contain information about the manufacturer, region of collection, composition of the product and expiration dates.
If you buy honey from your hands in the bazaar, then pay attention to the main features. In addition to viscosity, high-quality undiluted honey has the following indicators:
- a light aroma should be clearly felt, not acidic and not absent;
- when pouring from a spoon, high-quality nectar will flow in a thin stream, not dripping and not lingering on a spoon;
- in a natural product, you can clearly see natural impurities in the form of pollen or propolis;
- the product should not foam when shaken or when interacting with the container.
You can determine the quality of products at home in a few minutes. Before buying the necessary measure, get a small jar and test it with iodine. Dilute a teaspoon of honey in a glass of water and add a few drops of iodine. A poor-quality product will turn blue and precipitate.
