Whey: application and recipes

Surely many have tried whey. Recently, this product has become especially popular, it can be found in many stores next to yogurt and milk. Many understand that whey is useful, but few people know how much, and in fact it is even used in medicine. In this article, we will talk a little more about this food product, how it is created and how best to use it.

What it is?

First of all, let's figure out what kind of drink it is and where it comes from. Whey is the greenish, demineralized liquid that remains after milk has been curdled and strained. It is obtained in the production of various fermented milk products, such as cheese, cottage cheese, cheese and the like.

There are two types of proteins in milk: casein and whey protein, separating one from the other, we get whey.

Kinds

There are three types of whey: cheese, curd and casein. The first is obtained during the production of cheeses, the second is the result of the production of products such as cottage cheese, feta cheese and yogurt, and the third is extracted during the production of casein.

Their main difference is the taste. Cheese has a sweet taste, cottage cheese has a sour taste, and casein has something in between. In addition, they differ in composition, calorie content, in the content of proteins, fats, carbohydrates and various minerals and vitamins. All types of serum are useful, but in different ways. Cottage cheese helps better with a sick stomach, cheese curd helps with skin problems, casein better strengthens the immune system. Otherwise, the differences are insignificant.

Also, whey is salty and, accordingly, unsalted. They differ only in taste - the first tastes more like cheese, and the second - cottage cheese.

Beneficial features

As a prophylaxis, serum is much more useful than drugs or any medical or near medical preparations, since its action is milder, it acts stably, and its effect is long-term. It is recommended to drink it two or three times a week for the prevention and even treatment of various diseases associated with the intestines, cardiovascular system, skin and much more.

Let's take a closer look at this.

  • Whey has a very beneficial effect on the digestive tract, it helps to cope with diseases such as gastritis, pancreatitis and intestinal inflammation.
  • It helps to reduce the acidity of the stomach, improve the microflora and cleanse the intestines, and with prolonged use it normalizes stools and even heals wounds and ulcers.
  • It also helps to cope with the problems of the genitourinary and endocrine systems, with regular use, it helps to normalize the functioning of the kidneys and adrenal glands.
  • Increases the chances of curing diabetes.
  • Milk whey helps to completely cleanse the body of toxins, salts and cholesterol.
  • Also, the drink quenches thirst well and fills the body with energy.
  • It also normalizes blood pressure.Regular whey intake is a good prevention of hypertension, atherosclerosis and even cardiac ischemia.
  • The drink is even recommended for anemia, as it increases the rate of formation and development of blood cells.
  • Serum increases the production of serotonin, thereby helping to normalize the emotional state, cope with stress, chronic fatigue, sleep disorders and irritability.
  • It improves skin condition and prevents sunburn.
  • Calcium, which is rich in whey, helps to create smooth skin and get rid of cellulite.
  • It helps strengthen hair roots, treats dandruff and makes hair voluminous, shiny and thick.
  • It reduces appetite well, and therefore is an excellent option for people on a diet.
  • Whey is also used in the treatment of joint diseases such as arthritis or arthrosis.
  • Among other things, whey strengthens the immune system.

These are all the positive properties of whey. But do not forget that whey is not a medicine, and therefore it should be used only as an auxiliary or prophylactic agent.

If you are sick, then it should be used along with the medicines recommended by the doctor, only then will it be useful. Moreover, for all those suffering from diseases that are somehow related to the stomach, it would even be better to consult a doctor about whether whey can be consumed so as not to aggravate the disease and not harm the body.

  2. Allergy to beta-lactoglobulin. People with this allergy are not recommended to drink whey. However, if you really want to try it, then you need to start with small amounts, and depending on how your body reacts, decide whether to increase the dose or not.

As you can see, there are not so many contraindications for use, and in general, whey is suitable for almost everyone.

How are they produced?

As already mentioned, whey is one of the by-products of the production of cheese, cottage cheese and other fermented milk products. After the milk curdles, the casein is separated from the whey protein and whey is obtained.

To achieve this, special bacteria are usually added to the milk, as this is the easiest way, but any acid or proteolytic enzyme can also be used for this. As a result of this effect, lactic acid is formed, which leads to the folding and separation of casein.

How to do at home?

Many lovers of all natural know that whey can be prepared independently at home.Such a drink is much healthier than bought in a store, as it does not contain preservatives.

If you are also a fan of a healthy lifestyle and natural products, then here are the recipes for making whey at home.

  1. You can get whey from ordinary milk, better than goat's, as it is more fatty, but if it is not there, then you can also make it from cow's milk, the fat content of which is from 2.5%.
  2. You will also need live lactic acid bacteria. The easiest way to find them is in yogurt or kefir with bifidobacteria.
  3. Heat the milk to thirty-five 35 degrees and add yogurt (or kefir) to it, at the rate of three tablespoons per liter of milk.
  4. Wrap the resulting product in a blanket or a warm blanket and leave it for eight hours until the curd mass is formed.
  5. Then take a deep bowl, put a colander in it and put more cheesecloth on top, folded in several layers, and then strain your mass through it. A significant part of the whey will be in the bowl immediately, but not all.
  6. If you want to get the maximum product, then the edges of the gauze should be tied together and left overnight so that all the whey flows out of the curd.

The resulting serum should be stored in a tightly closed glass jar in the refrigerator. In this form, it can stand for at least a month.

There is another easier way to get whey exclusively from milk.

  1. Milk should be poured into a saucepan and put to the battery or in the sun for a day so that it turns sour.
  2. After that, sour milk must be put on fire and brought to a boil.
  3. As soon as it boils, it must be immediately removed from the stove.
  4. Let the product cool down.
  5. After that, strain it in the already familiar way from the first cooking option.

The resulting whey will be just as useful as in the first version, but may be inferior to it in taste and consistency.

You can also not wait until the milk turns sour, but simply add citric acid to it as ordinary fresh milk boils.
