Milk is a very useful product, but in its initial form it may contain microorganisms that are very harmful to human health. To protect yourself from diseases and extend the shelf life of milk, it is recommended to boil it. The process is not so simple, but if all the rules are followed, it will bring the proper result.

Why do you need to do this?

By raising a cow on your own and properly caring for it, you can not be afraid to drink fresh milk. But when buying from other farmers, you need to play it safe and take into account the boiling procedure.

The reasons why you should definitely boil a homemade product are as follows.

  • Ability to transmit diseases to animals. As a result of this fact, dangerous microorganisms can also enter milk. Improper cow care leads to the same result.
  • The product may contain antibiotics. It is likely that they were fed to the animal in order to prevent diseases.
  • Due to the content of lactic acid bacteria, fresh milk can turn sour immediately on the day of milking.
  • The person who milked the animal himself could not adhere to the established rules for the procedure.
  • Storage and transportation of goods may have been carried out without observing sanitary standards.

When boiled, the following elements disappear:

  • pathogenic bacteria from the skin of a cow, milker or from the air (the boiling process helps to kill brucellosis, for example);
  • lactic acid bacteria, which are necessary for sourdough (but due to this fact, the product is stored longer);
  • enzymes that allow infants to digest milk formula (adults can get them from fermented milk products);
  • vitamin C and some others that are not very resistant to heat treatment (but there are very few such components in the initial product);
  • immunoglobulins needed only by calves.

But at the same time, the product retains:

  • calcium is the most important and useful component;
  • a significant proportion of vitamins and minerals;
  • fats and milk proteins.

Despite all these facts, even in a glass of boiled milk or ordinary store milk there is a small amount of antibiotics that are resistant to high temperatures, which are added to animal feed in industrial production.

Suitable cookware

Milk tends to burn. In order to avoid this fact, you need to choose the right dishes.

It is recommended to boil the product:

  • in an aluminum pan;
  • in glass containers;
  • in stainless steel containers.

It is not recommended to carry out the process with a boiler, as this will form a large layer of scale, and the milk around the device will burn. It is also better to take dishes with a thick bottom. It is strictly forbidden to heat milk in enameled dishes.

Process features

First you need to properly prepare the dishes, so that homemade (village) milk does not escape and burn, namely:

  • rinse the container with cold water;
  • put the saucer upside down on the bottom of the pan.

The boiling point of cow's milk is about 100 degrees. With direct boiling, you need to completely take the whole process under control and periodically mix the milk.You can’t do without the formation of foam, so you should remove it with a spoon as it forms. The boiling procedure is carried out on low heat.

You can remove it from the stove after 2-3 minutes of boiling. It is not necessary to remove the film that appears during the cooling process, since a large amount of elements necessary for the body is concentrated in it.

If burning cannot be avoided, it is recommended to pour the milk into another container as soon as possible, which must be placed in a container with cold water.

Dip a pinch of salt into the milk and mix - this will help remove the unpleasant aftertaste.

In a slow cooker or microwave

You can also boil milk in the microwave. In this case, more vitamins and minerals evaporate, but it is not a fact that pathogenic microbes will completely disappear. Therefore, it is better to still do it on the stove.

A microwave oven will help boil milk in a shorter period of time, preventing it from escaping. To do this, pour the liquid into an ordinary mug or similar container (but not made of metal) and place a fairly long wooden spoon or stick in it. This method will allow the liquid to evaporate through the hole and prevent the rapid release of foam. It takes 20 seconds to heat the milk, while taking it out and stirring 2-3 times. It won't let him run away.

It is also allowed to boil it in a slow cooker. To do this, select the "Steam / pasta" or "Milk porridge / cereal" mode (as in Redmond multicookers, for example) and carry out the procedure for 7-10 minutes. You must first remove the steam valve.

In an electric kettle

It is not recommended to carry out the procedure in this way, since the electric kettle is not designed to boil milk.It doesn't evaporate, it just burns. The fats and proteins that are contained in the milk mixture will stand out and form a layer on top. He won't let the milk boil. If there is no steam, then the kettle will not turn off on its own. All these facts indicate that milk cannot be heated in a kettle.

How much time is required?

Milk is usually boiled for 2-3 minutes, but for a child to use it, some experts recommend increasing the process to 10 minutes. However, pathogens are already killed when the boiling point is reached, and it is quite possible to limit yourself to 3 minutes.

It is not worth keeping milk on the stove for too long after boiling.

Possible problems and solution

Some useful tips for better results are described below.

  • In the event that a saucer of the right size was not found in the house, you can grease the edges of the pan with any fat before adding milk, then it will not burn and run away.
  • To prevent milk from curdling and not sour, even under hot weather conditions, it can be placed in a glass or enamel bowl and placed in a container of cold water. Cover the device with gauze (towel) from above and place its corners also in water.
  • Adding a teaspoon of sugar while boiling the milk will help increase its shelf life.
  • In the light, milk loses a large amount of vitamins, so it is kept in a dark and cool place.
  • There is a storage method without a refrigerator. It is necessary to boil the product 2 times a day, and leave the container open until completely cooled.

Thus, fresh cow's milk must be boiled. At the same time, useful properties will be preserved (most of them), but pathogenic microbes can no longer be afraid.
