Plant-based milk: what is it and how to make it at home?

Today, few people can be surprised by the presence of vegetable milk in their refrigerator. Why is this drink gaining more and more popularity? There are many reasons for giving up animal milk. Violence against pets, the use of hormonal and antibiotic drugs in the workplace, or simply lactose intolerance - all these factors lead a person to a new choice. And switching to plant-based milk will be the right decision.

Description

Milk of plant origin is almost indistinguishable in appearance and consistency from cow's milk. It can just as well be added to coffee or tea, without even noticing a significant difference. And for big cappuccino lovers who want to switch to a plant-based drink, there is good news: such milk is perfectly whipped, forming a thick foam, without which it is impossible to imagine a popular type of coffee.

The herbal drink can be used wherever you need to use classic milk, whether it's baking or homemade ice cream. It is made from any edible seeds or nuts and therefore the mineral and vitamin composition varies depending on the raw material.

What are they made of and what happens?

There is a wide variety of types of this drink, you can find your favorite vegetable milk recipe. And, as it is already clear, there are many options for cooking, but consider the most popular ones.

  • Soy. It would be fair to put him first. This drink has long been common in the West and has more than one variation in execution, for example, with the taste of chocolate, banana, vanilla. In Russia, soy milk has also been known for a long time, however, for many years it was unjustifiably forgotten, which was facilitated by rumors about the dangers of GMOs. Good or bad genetic modification of plants affects human health is another topic. But today, even anti-GMOs can easily find a soy drink made from the original beans.
  • Coconut. Far from the cheapest milk. But those who have tried it can agree that it is incredibly tasty. And, most importantly, during self-cooking there is no need to use additives like sugar, honey, cocoa. Coconut milk even outperforms cow's milk due to its richness. In addition, no matter how biased it sounds, this drink is ideal for pairing it with tea or coffee.
  • Oatmeal. Milk, which is becoming more and more popular for the Russian consumer. Which is not surprising: after all, there is much more trust in the long-familiar oats than in the same soy. If we talk about taste, then this drink has a slight bitterness. But she will not be disturbed if a little honey is added during home-made. In the industrial version, even a slight bitterness disappears from such milk and a noble oatmeal taste with unobtrusive sweetness remains.
  • Hemp. There are probably few people left who still experience unreasonable hatred of this plant. After all, its seeds contain all the essential amino acids, which is especially important for those who do not eat meat. Hemp milk is tasty with a light nutty note. And its composition is the best suited for the preparation of sports cocktails.
  • Almond. The pleasant delicate taste of this milk will leave few people indifferent. Made at home, its distinguishing feature is a longer shelf life compared to other plant-based drinks. This advantage allows you to take almond milk with you on the road, without fear of finding a sour product at the right time.
  • poppy. A somewhat exotic option, despite the fact that long-familiar poppy seeds act as the basis. It has a sedative effect, which is good if you drink a glass of milk before bed. The drink has a tart taste with a slight bitterness, which, as in the case of oat milk, quickly becomes invisible when honey is added.

Benefit

Each type of vegetable milk is remarkable for something of its own and carries a certain benefit. So, first things first.

Soy drink is rich in calcium, iron and zinc. Due to the increased protein content compared to the cow analogue, it is popular among athletes. Plus, it has a high-quality amino acid composition and is rich in B vitamins. But make no mistake, B12 (aka cyanocobalamin) is not there, like in any other vegetable milk. Unless, of course, the manufacturer purposefully added this vitamin during manufacture.

In addition to a decent vitamin and mineral complex, milk contains phytoflavonoids, similar in structure to the estrogen hormone. They, in turn, play an important role for the female body, helping to prevent cancer and cardiovascular diseases. Soy drink is especially useful during the beginning menopause.

As for men, the negative effect of estrogen with moderate consumption of the drink (1-2 liters per week) does not manifest itself.

At the same time, it only benefits by reducing the risk of prostate cancer.

Coconut milk will not be able to demonstrate a qualitative amino acid composition, but it does not become less useful for this. The high content of easily digestible fats in the composition of the drink makes it an attractive remedy after a large loss of energy. And the B vitamins will support the normal level of the nervous system in stressful moments of life.

During periods when there is an increased risk of infection, it is worth paying attention to this milk. The fact is that lauric acid, which contains coconut pulp, will serve as a defense against threats from various diseases. In addition, there is a lot of manganese in the composition, which will improve the production of insulin, which can make life easier for people with diabetes. And also this element has a beneficial effect on reproductive function in men.

Oat milk is loaded with antioxidants, making it a preventative against certain types of cancer. And if there is a shortage of B vitamins, then this drink will make up for the deficiency in the best possible way. If you regularly include milk in your diet for weight loss, then it will be easier to cope with hunger. This is because it has a low calorie content and you can not limit yourself in its use. In addition, with the constant use of the drink, a lack of calcium in the body will not threaten.

You can talk about the benefits of hemp milk for a long time, but let's focus on the main benefits. The composition contains not only all the essential amino acids, but also a complete set of fatty acids that are not synthesized by the body (Omega-3, Omega-6). At the same time, their ratio is the same as ideally should be in the human diet: one to three. The presence of Omega-3 is especially important, the lack of which will provoke inflammatory processes in the body, as a result of which cancer can begin.

In addition, it is worth mentioning a number of other useful properties. With bronchitis or asthma, hemp milk will help the healing process and reduce the symptoms of the disease. It will also benefit those who suffer from sleep disorders. In addition, a hemp drink improves well-being even with oncological diseases.

Almond milk will please, in addition to its taste, also the benefits brought to the health of the body. It has a good combination of calcium and vitamin D, which allows the former to be much better absorbed. And also the presence of vitamin E is in many ways beneficial for health, especially for women. The presence of vitamin A is good for the eyes.

Poppy milk holds the record for calcium content. For example, in cow its presence is on average 300 mg, and in poppy - nearly 1500 mg. And if you wanted to stop drinking animal milk, but did not do this because of a possible lack of calcium, then now there is nothing to be afraid of. It is also remarkable that such a drink is able to prevent diarrhea by suppressing the vital activity of some microorganisms that may be involved in indigestion.

In any case, it is difficult to say which type of plant milk is the most useful. It all depends on individual factors that you, given the above, will be able to evaluate and make a choice on your own.

Harm

There is one wonderful phrase belonging to the chemist Paracelsus, in a modern way it sounds like this: “Everything is poison, everything is medicine; both are determined by the dose. It's the same with plant-based milk. And the dose that determines the benefit, on average, should be no more than 1 liter per day.But each raw material for the manufacture of milk has its own unfavorable characteristics.

The first thing to know is that every germ from which a plant is supposed to turn out, whether it be a nut, a seed or a grain, contains phytic acid. It is one of the forms of phosphorus and manifests its negative effect when, getting into the body with food, the acid binds calcium with other minerals, such as iron, zinc, magnesium, which makes these elements 20-60% less digestible. . In addition, phosphorus itself in the phytic form becomes practically inaccessible. And this means, no matter how rich in minerals the product is, the high content of phytic acid will negate all the possible benefits.

But there are several ways to neutralize this component. And in our case, one will be optimal - preliminary soaking of raw materials for a day. Yes, such a simple action provokes the germination of the seed, which completely or partially rids the product of phytates. Therefore, unheated grains or seeds should be used. If you cook milk from oatmeal, then waiting for germination is clearly unreasonable, and in this case, lemon juice must be added to the soaking water (about half a lemon per 0.5 liter of water).

Now a few words about the possible harm from drinking soy milk. In fact, all of its potentially detrimental effects are a rather ambiguous topic, leaving questions behind. For example, is soy drink really dangerous for people with a thyroid problem? Will a man have problems because of the phytoestrogens that soy contains? And, since there is no clear evidence of negative impact yet, the danger can be considered conditional. But still, people at risk should be careful and not abuse the product.

As for coconut milk, it should be noted that it is an exception to the rule and does not contain phytic acid. There are almost no contraindications, except that people with liver and gallbladder disease should not drink a lot.

In other cases, in order not to encounter negative reactions from the body, it is necessary to take into account possible allergic reactions to the raw materials for milk and, again, not to abuse it. And when you get acquainted with a new type of drink, it is better to introduce it into the diet gradually.

How to prepare milk?

All types of vegetable drinks are prepared according to approximately the same technology. To make milk at home, use the following cooking recipe: 1 cup of the original product is soaked, as already mentioned, for a day. It is better to have time to change the water several times during this time. Then rinse everything thoroughly and place in a blender. Add 3-4 cups of water to the contents. Set the power to medium and beat for 1-2 minutes. After that, pour the resulting liquid into the prepared container, and remove the cake from the grinder and squeeze it thoroughly.

At this stage, you can finish with the preparation of milk, but ascetics will appreciate it rather than ordinary people. Therefore, it is better to add 3 teaspoons of honey to the finished liquid. But since not everyone eats honey, as an alternative, while the blender is running, you can add a few dates to the drink to taste. You can also pour the milk into a saucepan and bring it to a boil. This procedure is especially relevant for soy drink. This will make it taste much better.

But everything described does not apply to the preparation of coconut milk. Of course, it is not necessary to measure with glasses. Everything is simple here, for one medium fruit you need 0.5 liters of water. And there is no need to soak the pulp either. The entire contents of the coconut, including the liquid inside, is placed in a blender. Water is added and the whipping time lasts about 3-4 minutes. At the end, after straining and squeezing the cake, you can immediately drink the drink. Milk does not need either honey or heat treatment. You will definitely appreciate the attractiveness of its original taste.
