Skimmed milk powder: composition, benefits and harms
Powdered milk is a white powder that is obtained from the skimmed milk of farm animals by thickening and drying it. This nutritious product is widely used in cooking for the preparation of a wide variety of dishes, it is dissolved in water and drunk like plain milk, and in addition, it is introduced into a balanced baby food.
Powdered milk usually has a longer shelf life. It is important that during production it retains all the minerals and useful vitamins that are contained in liquid milk.
Calorie content and composition
Any powdered milk, like whole milk, consists of proteins, as well as fats, milk sugar and mineral components. At the same time, a fat-free product contains much less fat than a whole one, but the content of proteins and sugar in it, on the contrary, is much higher.
The milk has a slight creamy tint, as well as a slight smell with a taste characteristic of cow's milk. It is very quickly and at the same time completely soluble in any volume of water.
The product is easy to use, easy to store and easy to transport. As a rule, for this it is packed in a plastic or paper bag or in cans. The only condition is the absence of moisture access, therefore, in industrial conditions, vacuum packaging is often used, as well as an inert gas.
The structure of skimmed milk powder includes such minerals as Ca, Mg, P, K and Na in a significant dosage, the presence of Mn, Se, Cu, Fe and Zn is slightly less in it.
The product contains vitamin C, B vitamins, as well as A and K.
100 g of dry fat-free powder contains 373 kilocalories. For comparison, the calorie content of a whole dry product is much higher - 549 kcal.
Powdered milk can only be made in industrial conditions, you should not even try to do it at home.
The production cycle includes several main stages.
- Acceptance of raw materials. At this stage, the milk coming from the manufacturer is heated to 40 degrees, after which it is cleaned of various impurities.
- Normalization. The purified milk is sent to the separator, where the separation of the SOM from the fat cream begins.
- Pasteurization. The fat-free part is heated to 90 degrees, after which it is quickly cooled.
- Thickening. The cooled workpiece is placed in a vacuum unit, where the complete evaporation of moisture begins. The process continues until the presence of solids is 40-50%.
- Homogenization. The resulting product is heated to 60 degrees and maintained at this temperature until a mass of a homogeneous structure is formed.
- Drying - the resulting "condensed milk" is pumped into the dryer through a special pump.
- Package. The completely dried powdered product is packaged in individual packages, after which it is sent for storage and sale.
Many people eat powdered milk, but most often it is dissolved in water. As a rule, it is diluted at the rate of 1 part milk to 8 parts water.
To prepare one glass of milk in 200 ml, 5 tsp are usually taken. powder and slowly add warm water in small portions with constant stirring. Before use, the product can be boiled over a fire and cooled.
For reference: in 1 tsp.contains 5 g of dry product, and in the dining room - 20 g.
Taking into account the dilution ratio of 1 to 8, it can be easily calculated that each large spoon of a dry product contains 150 ml of a drinking product, and a teaspoon - 40 ml.
Benefit
Disputes about the usefulness of skimmed milk powder do not subside to this day. Many argue that this product does not carry any value, since all minerals and vitamins break down during a long heat treatment. However, this statement is not true - a dry product completely retains all its useful characteristics during the production process, moreover, due to prolonged exposure to high temperatures, pathogenic microflora is completely destroyed.
By the way, in terms of calcium concentration, this product significantly exceeds all other dairy products known in nature. Dried milk has a minimum amount of cholesterol, which is why it can be safely recommended for adults and children suffering from cardiovascular pathologies and hypertension.
Powdered milk is rich in proteins that are needed for the development of bone and muscle tissue, and therefore it is widely introduced into the composition of ready-made milk formulas for infants.
The presence of vitamins has led to an exceptionally beneficial effect of skimmed milk on the body. So, vitamin C increases immunity and resistance to viral and colds. B vitamins have a regulatory effect on the functioning of nerve fibers, improve the functioning of the brain, prevent memory deterioration, and contribute to the establishment of mental balance.
Thanks to vitamin K, the blood acquires normal clotting, and vitamin A is indispensable for improving visual acuity.
The product has a high content of essential amino acids, which are very important for protein synthesis, so the product is often used by athletes to build overall muscle mass. Powdered milk can be a good protein substitute. With a sharp weight gain, the use of milk powder allows you to replenish the resulting protein deficiency in the bodybuilder's body and increase the calorie content of his diet.
The content of a significant amount of vitamins, macro- and microelements is especially important for a person experiencing great physical exertion. Sports nutrition experts recommend consuming 100 g of dry powder three times a day.
It is very important that milk is necessarily skimmed, because whole milk will not bring the desired benefits.
Proteins in the composition of the product are characterized by good digestibility and ease of exposure to the human body. That is why the product is used all over the world by boxers, hockey players, athletes and many other athletes.
Possible harm
However, the use of powdered milk can also cause harm to the body, its use is especially dangerous for people with lactose deficiency. As a rule, this pathology is congenital. The consequences of taking this product in food in this case can be the most severe - from edema to severe anaphylactic shock.
The most unfavorable consequences for the body can be caused by violation of milk storage conditions. Quite often, unscrupulous manufacturers, in order to reduce the cost of milk, introduce vegetable fats into its structure, usually palm oil is used for this.
Such manipulations not only reduce the nutritional value, but often cause serious health problems. And non-compliance with the conditions of packaging and storage quite often leads to the development of colonies of pathogenic bacteria and mold, which causes serious poisoning of a person and can strike a blow to the nervous system.
