Americano coffee: characteristics and secrets of preparation
Americano coffee, which is quite clear from the name, was invented by the Americans. Unlike espresso, it has a milder taste, it lacks bitterness, which is why it has become widespread throughout the world.
Peculiarities
Americano is an espresso-based coffee drink (concentrated black coffee without additives), but contains more water. The origin of coffee dates back to World War II, when German soldiers demanded Italian baristas to brew a less concentrated and bitter espresso for them. The latter simply diluted the prepared espresso with water. The name of the drink is translated as “American coffee”.
However, with this method of preparation, the drink lost its characteristic foam, therefore, after a while, the Swiss began not to dilute the espresso with water, but, on the contrary, pour the finished espresso into the hot foam. In this case, the foam, or as it is more correct to call it "cream", remains on the surface.
The ideal ratio is 3 parts water to 1 part espresso. The classic serving of americano is thus 120 ml.
However, today there are many variations in the ratio of espresso and water, for example, 1: 1. In this case, it should be noted that the americano is sufficiently strong, it even has a characteristic bitterness. The technological map implies the use of 7 g of ground coffee beans and 120 ml of water. In this case, the calorie content of the drink is low - about 3 kcal per 100 ml.However, Americano is often served with milk, cream and sweeteners, which significantly increases its energy value.
Because espresso-based Americano is made, it must also be subjected to a short-term (no more than 30 seconds) coffee extraction (hot water pouring through the coffee mass). With a longer extraction, the drink acquires a burnt aftertaste, bitter. The content of nutrients in it is minimized.
With a shorter extraction, the drink has a too light shade and is characterized by a lack of coffee taste. It turns out the so-called empty coffee. If the proportions of coffee are not observed, the drink is also bitter and may have white spots on the surface.
What is the difference?
Despite the fact that Americano is based on espresso, the difference between these drinks is enormous. It can be reduced to two criteria:
- the strength of the drink;
- drink volume.
Espresso is more concentrated due to the fact that it contains 3 times less water. At the same time, the amount of coffee beans is the same in both drinks - on average it is 7-10 mg, so the caffeine content in a serving of espresso and americano is the same. Espresso has a more pronounced taste with a characteristic bitterness, while the taste of Americano is soft and delicate. Velvety is also given to it by the often included milk or cream, sweeteners.
Espresso is served to true gourmets without additives, as it is believed that they interrupt the taste of coffee. Since the drink is very strong, it is served in small thick-walled cups, the volume of which is 50-60 ml. However, it is permissible to use larger dishes (up to 100 ml) in size, but espresso is always poured no more than 40 ml. The classic portion of the Italian version of the drink is 25-30 ml.A serving of Americano is 120-200 ml.
Another espresso-based drink is cappuccino, so it is logical to compare it with Americano. The classic recipe for the latter involves only coffee and water, while cappuccino necessarily includes coffee, milk and milk-based foam. They are related by the fact that both American and cappuccino are based on one serving of espresso, so the caffeine content in them is the same. However, due to the addition of water to the Americano, it is less concentrated.
The differences also apply to the calorie content of drinks: a cappuccino, of course, turns out to be more nutritious due to the content of high-fat milk (there simply will not be milk foam from another), when compared with an Americano made exclusively from coffee and water. Both drinks are served in fairly large mugs. A portion of cappuccino is 180-220 ml.
Kinds
Depending on the country where the Americano is prepared, its recipe may vary slightly. Traditionally, the following types of drink are distinguished.
- European. Assumes 2 cooking technologies. According to the first, 90 ml of hot water is added to the finished hot espresso. The second method involves serving espresso in a larger cup and a cup of water. The strength of the drink is adjusted based on personal preference.
- Italian. Italians prepare Americano by adding hot water to a standard portion of espresso in such a volume that the volume of the finished drink is 120 ml.
- Scandinavian. This method differs from the Italian one only in that a portion of espresso is poured into hot water, due to which a light brown “cap” forms on the surface of the finished Americano.
Americano can contain various additives that significantly change its taste.So, for example, a drink with the addition of cinnamon is quite common. To do this, Americano is being prepared in a Turk or a coffee machine, and at the same time, 150 ml of milk is heated in a thick-bottomed pan with the addition of a cinnamon stick. This should be done for several minutes, until the milk absorbs the spicy aroma of cinnamon and acquires a light brownish tint. The ingredients are mixed in tall glasses, you can add a spoonful of honey.
A harmonious flavor combination demonstrates americano with chocolate. As in the previous recipe, you need to boil the Americano, and add the chips of several chocolate bars to the milk and heat it until they melt. After that, hot chocolate-milk mass is poured into the coffee, their ratio is 1: 1. You can decorate the drink with cream or syrup.
One of the most popular additions to americano is milk. For a standard serving of the drink (120 ml), 30-50 ml of milk is added. It tastes better if it has a high fat content. Although this significantly increases the calorie content of americano.
Also, milk can be divided into 2 parts, one of which is beaten. In this case, you get a beautiful airy "cap", which is laid out on the surface of the drink.
An important point - to obtain it, you must take milk, the fat content of which is not less than 3.2%. The milk in the Americano is added warm, to avoid blurring the taste of the drink, it is recommended to replace 1 part of the water in the Americano with the same amount of milk.
During the hot season, Americano can be served cold or even over ice. In the first case, classic espresso is brewed, which is diluted with cold water. In this case, the amount of caffeine in the drink is reduced, so for a rich taste, it is recommended to take a little more coffee beans than usual.An iced Americano involves adding a few ice cubes to a hot drink. In this case, it is characterized by an unusual coffee aftertaste.
Americano with mint will also help quench your thirst. To do this, a couple of mint leaves are placed in the cezve immediately after the fire is turned off, but until the coffee is poured into cups. You can also put mint in a ready-made drink. It is served both hot and cold.
Various spices, especially in combination with milk, allow you to reveal the taste of coffee. Traditionally, cinnamon, cardamom, and cloves are added to Americano. You can prepare a drink with the addition of alcohol, as a rule, these are various liquors, rum, amaretto.
Americano with marshmallows is very popular in coffee shops. These confectionery products outwardly resemble marshmallows, however, in terms of viscosity, they are rather close to marshmallow, and egg whites are not used in their preparation. As a rule, marshmallows are placed on top of milk foam.
If you double the content of coffee and water, you get a classic American double (translated from English - “double”).
Additives allow you to change the taste palette of Americano, emphasizing its taste and softening it. However, when other components are added, the calorie content of the product always increases, because even 100 grams of the simplest sweetener - sugar accounts for 398 kcal. For one and a half teaspoons (namely, this is how much most people prefer to add to coffee), this is almost 40 kcal.
How to cook at home?
Classic espresso is prepared only in a coffee machine. Moreover, this drink was invented specifically for this device. It is logical that the correct americano also implies brewing in a coffee machine.To prepare it, you can select the appropriate mode on the unit or brew espresso, and then pour it into 90 mg of hot water in a thin stream.
Americano prepared using the second technology will have a more pronounced nutty aftertaste.
At home, you can cook a drink in a Turk. The recipe is quite simple and involves the following steps:
- it is necessary to boil 220 ml of water and wait a couple of minutes for the steam to go away;
- at this time, you can grind coffee (or use ready-ground coffee) and pour 1 teaspoon into a cezve;
- after that, it is necessary to pour coffee with hot water and put on fire, waiting for the drink to boil;
- it remains only to remove it from the fire and immediately serve it to the table.
For the preparation of Americano, you can use Arabica or Robusta, as well as blends from them. It should be borne in mind that the higher the content of Robusta, the stronger and more bitter the drink will turn out. The ratio of Arabica and Robusta is considered optimal - 2: 1. However, if you are just starting to taste coffee and are not ready for too strong drinks, you can introduce Robusta gradually, starting from 10-15% of the total mass.
It is important to choose the right degree of grinding. If you grind the grains yourself, then they should resemble river sand or fine salt like Extras. If the grains are more like granulated sugar in their texture, then it is too large, the drink will turn out bitter, rough. Too fine grinding (resembles flour or starch to the touch) is good for Turkish coffee, but not for Americano.
Before filling the grains with water, they can be warmed up a little by falling asleep on the bottom of the Turks. In this case, it is important not to roast the mixture, since the taste of coffee will be hopelessly spoiled: it will be bitter and smell like burning.
Finally, at home, you can also make Americano in a French press. To do this, it is better to grind the coffee finer, then pour 1 teaspoon of ground beans (this amount is calculated for 200 ml of water - 1 serving). After that, pour half of the hot water and cover the French flask with a lid without lowering the strainer.
After waiting a couple of minutes, the contents are mixed, after which the rest of the water is added. The drink should not reach the edge of the flask, 2-3 cm should remain before it. After that, wait 3-4 minutes and lower the French press piston, pressing the thick to the bottom of the flask.
Before serving, it is recommended to wait another minute to allow small particles to completely settle to the bottom, after which you can pour the drink into cups.
It should be understood that this method of brewing americano is far from the classic recipe. Unlike tea brewed in a French jacket and allowing liquid to be added during tea drinking, coffee does not provide for such actions.
The following cooking secrets will allow you to get even more delicious americano.
- It is important to take high-quality, soft water. Better bottled or filtered. If it is not possible to use this, you can pour ordinary tap water into open containers and let it stand for at least 8-10 hours.
- Excessively hard water (this is evidenced by sediment and scale on the kettle after boiling) can be softened by adding soda or sugar to it at the tip of a knife.
- Do not use water that has been boiled several times to make coffee.
- Water should not be allowed to boil, it is better to remove it from the fire at the stage of the appearance of “pearl strings”, when thin streams of steam begin to rise from the bottom of the kettle to the surface.After turning off the kettle, it is recommended to cool the water a little, the optimum temperature is 85-92°C.
- Reduce the amount of caffeine allows cardamom. To do this, just add a few grains of spice. The taste of the drink will turn out to be more tart, with a pronounced “warm” spicy aftertaste.
- It is better to grind coffee beans yourself and immediately before use. This is due to the fact that they absorb moisture, surrounding flavors and aromas. Maximum - you can grind coffee for the future for 1-2 days, but keep it tightly closed, excluding the neighborhood with fragrant foods and teas.
- To make the taste of Americano delicate and velvety, the addition of butter allows. They put it quite a bit, on the tip of a knife, before the drink in the Turk begins to boil.
- The following technique will allow you to give the drink a warm caramel hue: put 1 teaspoon of cane sugar on the bottom of the Turks and heat it, preventing burning. Next, coffee is added, and the Americano is prepared in the usual way. During the heating process, the sugar caramelizes, making the Americano sweeter, but not cloying, with an aftertaste reminiscent of the taste of toffee.
How to serve and drink?
If one of the conditions for the correct tasting of espresso is to maintain its high temperature (for which special thick-walled cups are even used that warm up before pouring the drink), then temperature indicators are not the main thing for Americano. It is drunk both hot and warm, and there are even varieties of cold Americano.
- A hot drink really should be. The supply temperature must be at least 70°C.
- Serve coffee already diluted with water in cups of a suitable volume.You can also take glasses of 200-250 ml and pour a portion of espresso into them. Together with them, a kettle or coffee pot with hot water is served at the table, so that each guest can adjust the degree of saturation of the drink at his own discretion.
- Americano and other extra-volume coffee drinks can be served in a 200 ml tea cup. It is better if it is ceramic or porcelain. For Russia, a standard tea cup is 130 ml. The cup should only be served on a saucer.
- For a cold americano and a drink with ice, you can use an elongated tulip-shaped glass on a low leg - a hurricane. Its volume reaches 400-450 ml, which is quite enough to add ice cubes.
- There are no special requirements for the use of Americano. This drink can be drunk both in the morning and in the afternoon, due to its reduced concentration. Although, of course, it is not recommended to drink coffee 1.5-2 hours before going to bed. The caffeine content can cause insomnia.
- Natural ground coffee contains special acids that improve digestion and help the body break down heavy and fatty foods. In this regard, Americano can be drunk an hour and a half before meals or 30-40 minutes after a meal.
- Hot americano with milk and spices is relaxing and warming. It is pleasant and useful to drink it after hypothermia, stress, a hard day's work.
- However, even excessive consumption of less concentrated americano can cause health problems. The allowable dosage of caffeine per day for an adult who has no contraindications to taking it is 300 mg. It is from these indicators that one should proceed when calculating the allowable amount of a drink.At the same time, we should not forget about tea and other types of coffee that also contain caffeine.
Do not confuse caffeine content and concentration. All drinks (including cappuccino, americano) have the same caffeine content if they are made from the same amount of espresso. It's just that one of the drinks will be stronger, while the other will be less concentrated.
Signs of excess caffeine in the body are palpitations, high blood pressure, bad taste in the mouth, nausea, vomiting, and abdominal pain.
