An ancient drink with a rich history is loved all over the world. Each country has its own rules and traditions related to its preparation and consumption. Let's try to figure out how to brew coffee correctly, consider the most popular ways to serve it, and get acquainted with interesting facts about the "drink of the wise."
Drink Features
The history of coffee has such long roots that the origin of the drink has not yet been established for certain. But we can safely say that after oil it is the most frequently sold and bought raw material in the world. There is not a single state on the planet in which they would not drink coffee. And this means that there are as many special ways of preparing it as there are countries in the world atlas.
The rhythm of life of a modern person literally rebuilds everything that surrounds him: entertainment, sports and even food. Everything around is going fast: express workouts, fast food, perpetual motion. In such conditions, even coffee has long become an instant drink for the vast majority. But this option has little in common with real coffee. Speaking of this invigorating remedy, first of all, it is worth implying a natural grain product that needs to be boiled.
It may seem to someone that the game is not worth the candle, because it simply makes no sense to cook for a long time what can be obtained in a matter of seconds. But such an opinion is erroneous. After all, the useful properties of any product are lost during its long processing.And in order to make coffee bean for brewing soluble, it is subjected to a lot of various manipulations. More about them will be discussed later. In the meantime, it is worth focusing on the effects of coffee on the human body as a whole.
A fresh drink brewed according to all the rules is able to give its connoisseurs a lot of benefits. Among the facts tested by time and scientists, it is worth noting the following:
- With moderate use, that is, no more than 1-2 cups per day, coffee can prolong life. This is due to its ability to regulate many processes in the human body.
- The drink is a mild laxative, therefore, its regular use will help avoid constipation. In addition, it has diuretic properties, so coffee drinkers have to drink plenty of clean water to replenish the balance, and this is a very healthy habit.
- The caffeine in this natural energy drink helps you focus. In addition, the drink, according to numerous studies by scientists, can prevent Alzheimer's, Parkinson's and type 2 diabetes.
The list of benefits of coffee beans is endless. This fact alone is enough to agree to spend a few more minutes to get a reference invigorating drink. But before you cook it, you need to purchase it. It is impossible to understand the intricacies of choice without knowing the entire classification of coffee.
Product varieties
Natural
The first thing a new coffee lover should understand is the variety of the drink. Many mistakenly attribute the names of coffee trees to them - arabica, robusta, liberica and excelsa. In fact, there are more than two thousand varieties of coffee, so there is simply no point in listing them all.But some still deserve special attention.
Certain varieties are obtained by different processing of coffee beans of one of the four listed trees. Kopi Luwak is considered the most expensive variety in the world. What is most surprising, the way it is produced is not only unattractive, but also quite shocking. This is not a creation of human hands, but of the life of an exotic animal musang. What this rodent does with so-called coffee cherries will please few.
He eats them. His stomach cannot digest them, so the grains simply leave the body of the animal in a natural way. But this journey is not in vain for coffee beans: at this time they undergo a very important process - treatment with gastric juice, or fermentation.
Under the influence of special enzymes, grains acquire a unique taste. In addition, coffee experts are sure that musang selects only the juiciest fruits, and this guarantees the highest quality of such coffee.
The two main varieties of a natural product are in grains and ground. In fact, the second type is only the final stage before cooking. For long-term storage, it is better to choose whole grains, since only in them all the useful and valuable substances of the drink remain intact for a long time.
The grains are subjected to different degrees of roasting. There is a large and complex system of their classification, but briefly they can be divided into light, medium and dark.
Ground coffee differs in the degree of grinding:
- Large. Not very crushed, large. Suitable for preparation in coffee machines and filter coffee makers.
- Average. Suitable for any cooking method.
- Small. Ideal for brewing a drink in a geyser coffee pot and cezve.
- Ultrathin. Similar in texture to flour. It is quite difficult to use such coffee, so it is rarely chosen, mainly for Turkish preparation.
The product of any grinding can be used as custard, that is, it can not only be boiled, but also infused by pouring hot water. To determine the pros and cons, it is worth considering the rival of the “correct” coffee - its analogue of instant cooking.
Soluble
This variety has three subspecies, each with its own production method. Let's get acquainted with each of them:
- Powder. To make it, the grains are roasted, ground, dried and sprayed. Before this, the grains are treated with hot water under high pressure. After a few more complex technological manipulations, instant coffee is obtained.
- Granulated. It differs from the first type in that, in addition to everything done with the powder version, this coffee is re-processed with steam. This is how characteristic lumps - granules are obtained.
- Sublimated. This cooking method is the youngest - discovered in 1965. The grains are roasted, a strong coffee infusion is prepared from them, and frozen. Then the ice is evaporated under the influence of high temperatures, and the coffee crystals are dried in a vacuum. This is the highest quality type of instant coffee. Unlike the first two, it retains all the taste, color, aroma, benefits.
Now that everything about the varieties of coffee has become clear, you can proceed to the most interesting thing - to prepare it.
Cooking methods
in turk
The most famous all over the world specialized utensils for making coffee is the Turk. As the name implies, this is a Turkish invention. Although something similar exists in many countries.For example, cezva among the Arabs or srjep among the Armenians. A fragrant drink brewed in a Turk is called "Turkish coffee".
Traditional Turks are made of copper. The budget option is a promise made of aluminum. There are also ceramic varieties. The most modern version is an electric model, which is arranged on the same principle as an electric kettle.
For this brewing method, fine and ultra-fine grind coffee is ideal. Even if you only have a rough or medium version at home, you can always bring it to the desired state using a conventional coffee grinder with blades, and in the absence of such a blender (submersible variety).
There are several general recommendations for using Turks, regardless of the chosen coffee drink recipe:
- The dishes must be preheated.
- The first step is to pour coffee into a heated cezve and wait until the beans reveal their aroma.
- Now you can fill with water. The colder it is, the better it will be for the drink.
- The Turk is put on a slow fire. From this point on, you need to monitor the appearance of a creamy foam on the surface of the drink. When it rises to the top edge of the dish, the Turk is removed from the stove and cools slightly.
- After the Turk is put on fire again, the drink is brought to a boil and removed again and cools a little.
- Actions from paragraph 5 and are done again.
These are the basics of making Turkish coffee. To prepare a wide variety of drink options, it is enough to add a little imagination to these manipulations or enlist the recommendations of an experienced barista.
In a geyser-type coffee maker
Another popular budget option for making an invigorating drink is using a geyser coffee maker.This is a great way to make the perfect coffee at home.
Most often, the device is an aluminum, steel or ceramic dish of two large parts that are screwed onto each other. Also included are a special funnel, sieve and rubber gasket. The essence of making coffee in this dish is that the raw material does not come into contact with water and fire.
The cooking mechanism in a geyser-type coffee maker is as follows:
- Water is poured into the bottom of the device. Then a special watering can from the kit is immersed in it. Part of the funnel is covered with a sieve. Coffee is poured on him.
- Another sieve is placed in the outer bottom part of the upper part of the coffee maker, fixed with a gasket. After you can wind the top to the bottom. So the ground coffee is securely fixed between the top and bottom of the coffee maker. It is held back on both sides by a sieve with very fine holes.
- When the water at the bottom of the coffee maker boils, the steam displaces it and it rises up through the watering can. Then the water passes through the coffee, saturated with its taste, aroma and color. So, a ready-made drink breaks through all the obstacles into the upper part of the coffee maker, like a geyser stream. Hence the name.
If coffee preparation in Turkish is considered the Turkish method, then this method is often called Italian. This is because the palm in the world for the production of geyser coffee makers belongs to Italy. If you compare these two methods, the second, of course, will require more effort. The process of washing all the details of a geyser coffee maker alone takes much more time.
However, fans of this cooking method single out one very important trump card of a geyser coffee maker against the Turks - the drink brewed in it will never have a burnt aftertaste. It is softer, more delicate, but no less rich.
In the coffee machine
This method is considered the fastest and easiest, because a person almost does not need to make any effort for it. The methods discussed above are the choice of romantics. And this one is for modern people who value every minute.
It is worth noting that the process itself can be different, and it depends on the type of device. Four main groups can be distinguished:
- carob;
- pods;
- capsular;
- super-automatic.
On the example of these types, one can consider a peculiar evolution of coffee machines. The simplest carob models require some human involvement in the cooking process. So, for them, you must first grind the grains and form a coffee tablet. In the simplest varieties, the cooking time is also manually controlled. More complex carob machines are equipped with the function of self-control of the preparation time of the drink. One big drawback of this type of machine is that it is difficult to care for them.
A pod is a special paper bag containing ground coffee. Pod coffee machines are filled with such bags. Accordingly, cooking in such a device is quite simple: you install the pod in the appropriate compartment, turn on the strait - and you're done.
Capsule options work on a similar principle. The only difference between a pod and a capsule is that the latter retains all the properties of coffee longer, since it has a more reliable structure.
Superautomatic machines, as the name implies, do absolutely everything for a person.It is enough to load whole grains into them, and at the exit you will get a ready-made drink. In such units, as a rule, dozens of recipes are programmed.
Regardless of which coffee machine you decide to purchase, in order to make coffee without any problems, it is enough to carefully follow all the instructions that come with it. The only thing that may seem like a disadvantage to some coffee lovers is that any coffee machine requires regular and time-consuming maintenance. It must be kept in proper order so that the drink always turns out delicious.
in a cup
Any finely ground coffee can be prepared right in the mug without any problems. To do this, you need the powder itself and hot water with a temperature of about 92 degrees. One cup usually has one teaspoon of coffee powder. The cooking algorithm is simple:
- pour coffee into a cup, pour it with water, mix;
- leave the drink to infuse for 2-4 minutes, covering the cup with a saucer;
- when the specified time passes, the thick settles, the drink becomes transparent, it can be consumed immediately;
- if you like coffee with sugar, you need to add it at the very beginning along with the powder.
In a drink prepared in this way, you can add any ingredients you like: cinnamon, grated chocolate, milk or cream - whatever you like. In its pure form, this option is usually called "Warsaw coffee". By the way, the brewing method in a cup is the official technique used in professional coffee tastings.
There are many recipes for making coffee directly in a mug by insisting on boiling water. For example, you can adopt an interesting option - Cuban coffee.
For effective serving, you need to cook it not in a cup, but in a faceted glass:
- Mix 13 g of medium ground coffee with 20 g of cane sugar.
- Pour the mixture with water - hot, but not brought to a boil. The optimum temperature is 90-95 degrees.
- Cover the glass with a saucer and leave for 4 minutes. The final chord can be the addition of a few drops of Cuban rum to the finished drink.
There are an infinite number of recipes for this method of preparation, so if you wish, you can give free rein to your imagination and drink a new drink every day. The only significant drawback: you need to drink such coffee directly from the thick, and not everyone likes it.
Cold brew
An alternative method of preparing coffee is to obtain a drink without heat treatment of the product. In coffee shops, special dishes are used for it. At home, you can get by with improvised means. In addition to coffee, you will need:
- plastic bottle with a volume of 1.5–2 l;
- glass jar of any capacity from 0.5 l;
- a piece of felt;
- coffee machine filter.
The algorithm of actions is very simple:
- Cut off the bottom of the bottle, screw the lid on the neck, turn the structure upside down.
- Bank to use as a stand. Having installed the structure on a glass container, lay the neck with felt folded in several layers so that it forms something like a cork.
- Pour ground coffee into the filter. Quantity - to taste. Tie the filter tightly with thread.
- Place coffee in the constructed structure and pour cold water to the brim.
- Infuse the drink for 12 to 24 hours, depending on the desired strength.
- To serve, just unscrew the lid and press on the container in the neck area. Felt will provide additional filtration.
Some mistakenly believe that the popular ice coffee is made from a traditionally prepared base with ice.However, it is the option prepared according to the recipe described above that should be considered true cold coffee. It can be drunk neat or with ice.
How long does it take?
Each of the above options for making coffee requires different efforts, as well as different times. To correctly calculate everything and understand which method is closer to you, you need to evaluate each technology according to this criterion. Let's make a rating by ordering all the ways to increase the time in minutes:
- in the coffee machine: 0.25–0.75 (or 15–45 seconds), depending on the model of the machine and the selected drink, plus 1–2 minutes for preparatory manipulations;
- in a cup: 2-4 plus 1-2 minutes to prepare dishes and raw materials;
- in turkish: 5–6 for the main cooking step, plus 1–2 minutes of extra time for removing from heat and reheating;
- in a geyser-type coffee maker: 7–15 (depending on the volume of the coffee pot) plus 1–2 for the preparation of the apparatus and raw materials;
- cold brew – 720-1140 (or 12-24 hours) plus about 5 minutes to prepare the powder to be brewed.
So, having a complete idea of how much time it takes to make coffee with each of the methods available at home, you can safely choose the best one and proceed to the search for suitable recipes. Consider the most popular ways to prepare a popular drink.
Recipes
The main thing you should pay attention to when choosing is the reason for cooking. For example, just to cheer up or try something new, surprise your friends with your culinary skills or brighten up a romantic evening. All recipes below are universal. That is, you can use them to brew coffee in any way you can.
It is worth noting that, oddly enough, pure coffee is not drunk all over the world very often. If you take a closer look, the choice of coffee lovers often falls on coffee drinks: latte, cappuccino, glasse and many others. Not everyone knows that they are based on the same “true coffee”, known in the world as espresso. Therefore, the first thing you need to learn how to cook is this strong and thick drink.
Espresso
In fact, the simplest coffee made in a Turk or in a geyser coffee maker is espresso. Both cooking options have already been discussed in detail above. But even here there are some nuances that deserve special attention. For example, there are different types of espresso that differ in the ratio of their main ingredients - water and ground coffee. Conventionally, four drinks can be distinguished:
- Standard espresso. For 30 ml of water is 8 g of dry product.
- Doppio. The so-called double espresso. And it's not about double the amount of water. When it is prepared, 16 g of ground coffee is brewed for 30 ml of liquid.
- Lungo. The complete opposite of the previous version. Coffee is 8 g, and water can be from 60 to 100 ml according to your taste.
- Ristretto. The strongest type of espresso. The standard dosage of 8 g of dry ground product is diluted with only 18-20 ml of water.
Another secret to a properly prepared espresso is the right beans. They must be deep roasted. To make sure you make the right choice, look for the inscription "Espresso" on the coffee packaging. Of course, the easiest way to make espresso is in a coffee machine. Some 15-20 seconds, and a cup of "standard" is ready.
With cognac
This strong alcoholic drink goes well with the taste of coffee. Therefore, there are many options to prepare such an option for adults. Let's consider the most interesting of them.
- French Habits. One of the curious examples of drinking coffee with cognac is not to mix them in one dish, but to serve them separately and drink them alternately. The ideal coffee in this case is a regular espresso. But this is by tradition, and so - at will. You can try any coffee drinks in such a pair. Cognac is served in a separate glass. They say that this method was invented in France.
- "Custard drink". The method of making coffee in a cup, described earlier, can be diversified by adding cognac to the ingredients. For 100 ml of water you will need 15 ml of an alcoholic drink. In order not to disturb the taste of the ingredients, it is important to pour coffee for brewing not with boiling water, but with water not hotter than 90 degrees.
- "Milk whim". There is another drinking product that goes well with both coffee and cognac. This is milk. All three ingredients can be mixed in a cold version of a coffee drink. To do this, you need to brew espresso of any concentration, cool it, then add cognac and milk to it at the rate of 8 ml of each per 100 ml of base.
- "An easy way to cheer up." Another option is to make any version of coffee or drink based on it and just drop a few drops of cognac into it.
Whichever method you like from the ones listed above, remember that the combination of coffee and cognac is a rather strong burden on the body. They shouldn't get involved. But occasionally, as an exception, you can afford such a delicacy.
Oriental
One of the options for oriental preparation is the classic Turkish coffee discussed earlier. It can be made closer to the original, oriental culture by placing the Turk not on the stove, but on hot sand. But in the home of the vast majority of Europeans, this is not possible.Therefore, it remains to be content with the Turk on the stove.
You can diversify the classic Turkish coffee recipe as follows:
- Turku put on fire, pour a little sugar into it so that it completely covers the bottom. Stir the sugar for a few seconds. Then fill it with water, filling the Turk about one third.
- Constantly stirring lightly caramelized sugar, you need to evaporate most of the water. Then you can pour ground coffee and fill the mixture with cold water to the full.
- On low heat, bring the drink almost to a boil. Before the characteristic bubbles appear, remove the Turku from the stove, stir the drink, add more sugar to taste. You can add your favorite spices.
One of the features of serving coffee in an oriental style is the invariable small cups - unlike the large glasses from cafe-bars familiar to the modern man in the street. Coffee in this part of the world is served directly from the ground, on which many Eastern women like to tell fortunes after a meal.
Cinnamon
One of the most popular spices in the world is cinnamon. It perfectly complements the taste of coffee, opens up new notes in it and enriches it with its own. This product can be found in two forms - in sticks and in powder. By the way, in the latter form, the product is a tool of coffee art - the art of creating drawings on coffee foam. In any of its forms, the spice fits perfectly into the original recipes for making coffee. So, there is a great example of a drink using cinnamon powder.
For 150 ml of water you will need 1 tsp. coffee, sugar and cinnamon - 1/3 tsp each. All dry ingredients must be mixed and made into coffee in any way convenient for you. If you want to get a light foam, it is better to cook in a Turk, but in the absence of one, you can also in a saucepan.Another recipe implies that coffee will be prepared first - any strength and consistency, even with milk or other additives. Then coffee needs to be poured into cups and immersed in each cinnamon stick. This must be done while the drink is still hot. When it cools to room temperature, it will absorb all the right notes of spice, and then it can be served.
With salt
To an inexperienced coffee taster, such a phrase may seem very strange. But anyone who has ever tried a drink brewed according to this recipe will understand the secret of its popularity.
To begin with, it is worth identifying the invaluable qualities of salt in the composition of a coffee drink:
- neutralizes the bitterness inherent in a strong drink;
- softens water;
- helps to reveal all the notes of coffee beans.
Of course, all the properties listed above are carried by a small pinch, and if the drink is oversalted, it, like any dish in this case, will be hopelessly spoiled.
Among the many recipes for coffee with salt, two of the most popular are worth highlighting. The first one is classic. For 200 ml of water you will need 2 tsp. ground coffee, 1 tsp. sugar and salt on the tip of a knife. You need to brew classic coffee in any usual way, add sugar to it and finally salt. Some people like to supplement such a drink with ½ tsp. cinnamon.
The second recipe is a bright refreshing drink with orange. For cooking, you will need 160 ml of water, 1.5 tsp. ground coffee, 1 tsp. sugar, 1 tsp orange juice, ½ tsp. orange peel, salt - a pinch. It is most convenient to prepare this version of the drink in a Turk. The algorithm is the following:
- pour coffee, salt and sugar into the dishes, heat slightly over a fire and pour water;
- bring the mixture to a boil and remove from the stove;
- when the drink has cooled down a bit, add orange juice to it and sprinkle the zest on top.
In any of the described recipes with salt, you can add cream to taste. This is an option for those who do not like too strong coffee.
With foam
There are many ways to make a foamy coffee drink. For example, it can be obtained while cooking grains in a Turk. As mentioned earlier, with this method of preparation, the foam forms by itself. But if you prefer other tools and devices for getting your favorite drink, then there are a lot of other options.
Every coffee lover knows the word "cappuccinatore". This is a special device that produces foam on coffee. Sometimes it is called a milk frother, but this is not a completely correct definition, since the device whips foam from any composition.
There are two types of cappuccinators: built-in coffee machines and separate, so to speak, manual options. Devices for automatic machines are also of two types: steamers - steam mechanisms, and mechanical - nozzles with whisks for whipping foam.
As for manual cappuccinators, in appearance and in essence they resemble a smaller and simplified version of immersion blenders, only at the end they do not have knives, but a whisk for whipping. These are miniature devices, usually battery operated. Today they can be found in any major store of dishes and kitchen utensils.
To properly prepare foam using a coffee machine, just follow the instructions in the instructions for your unit. The manual version is so simple that you can figure out how it works without separate instructions. But still it is worth identifying the main subtleties of its application. To make frothy coffee with this accessory, you need:
- Brew any version of a coffee drink without milk and pour the finished composition into a cup. It should be half or two-thirds full.
- Heat a small amount of milk over low heat. The temperature is up to you, but you can not bring it to a boil.
- Immerse the cappuccinatore in warm milk, turn on the machine and wait for the appearance of thick, dense foam.
- Slowly and carefully, so as not to disturb the structure of the resulting foam, place the latter in a cup of coffee.
- The final touch is the decoration with grated chocolate, broken nuts or mershmallow shavings.
The recipe described above can also be adopted by owners of coffee machines. If the machine is equipped with a steamer, the milk does not need to be preheated.
With mechanical frothing, success directly depends on the temperature of the milk: the warmer it is, the better the froth is obtained. Another indicator that is important in this matter is the fat content of the product. By analogy with the temperature: the higher it is, the denser and thicker the foam will come out on your coffee.
Helpful Tips
To prepare delicious and healthy coffee, it is not enough to stock up on the necessary utensils and study popular recipes. No less important are the nuances and subtleties that may not seem so obligatory at first glance. So that each cup of an invigorating drink brings only pleasure and benefit, do not neglect the following rules:
- Do not use unfiltered tap water. In addition to the fact that the issue of the purity of water used for food is a matter of health, it is worth considering the fact that the slightest impurities nullify the taste of the drink, reduce its benefits.
- It is preferable to buy coffee in whole beans. They should be ground immediately before cooking.So the maximum of useful substances will be preserved in the product and taste qualities will not be lost.
- Before cooking, no matter what utensil or method is used, make sure that all utensils are well washed and wiped dry. The quality of the final product also depends on this.
In addition to exclusively “coffee” nuances, all lovers of natural energy will need knowledge of the intricacies of serving any hot drinks. So, the cups must be heated before serving. This can be done in the microwave or in the oven. Another way is to boil water in a kettle and pour it over each cup. Only after that you can pour the prepared drink.
In today's world, where coffee shops are located on almost every corner, the temptation to use "everything is ready" is very great. However, it is worth touching at least a little on coffee etiquette and the culture of preparing this ancient drink, and it will be difficult not to fall in love with this process. This is a whole science, a fascinating world and a worthy hobby.
