This type of plant belongs to the genus Anacardium, to the Sumac family or Anacardiaceae. Cashews are native to Brazil.
From the point of view of botany, cashews are seeds (fruits), but in terms of their properties and composition, they are nuts.
Appearance
Western Anacardium is an evergreen tropical plant, a close relative of the pistachio.
Cashew trunks are curved, reaching a height of 10-12 meters.
The crown is dense and wide-spread. In diameter reaches about 10-12 meters.The branches are short and low.
The alternately arranged leaves are oval in shape and have entire margins. The skin of the leaves is dense, impenetrable, which prevents the rapid evaporation of water from the leaves. The leaves are leathery, elliptical in shape. There are up to 20 cm in length and up to 10 cm in width.
The flowers are five-petalled, narrow, pointed at the end. Reach 7-15 mm in length. Most often they are pink. Collected in the form of a panicle.
The plant has an interesting fruit shape, because. consists of two parts:
- fruit in the form of a curved drupe (hard shell), inside which is an oily seed up to 3 cm long and up to 2 cm wide.
- a large fleshy pear-shaped formation (false fruit, hypocarium), which is also edible. Their length is 5-11 cm. Inside they are very soft and juicy. Quite edible, have a sour taste.

The acajou fruit is called the "cashew apple" and the "cashew nuts" formed at the ends of these apples. Apples are not the true fruit of the tree.
Ripe apples are yellow and bright pink. They are not transportable, so you can only try where it grows directly. As for the nuts, they have a hooked comma-like shape and have a shell.
In addition to the core, there is a caustic phenolic resin in the shell, on contact with which you can get a chemical burn. For this reason, you cannot separate the kernel from the shell with your bare hands!
