Exotic vegetables: varieties and tastes
It is traditionally thought that only fruits can be exotic, not vegetables. However, this opinion is very far from reality. Several vegetable crops come to Russia, which are still unusual for gardeners, but deserve attention.

Among the most unusual exotic vegetables is the so-called purple potato. It should be said right away that this is not a root crop with a delicate pink skin, with a white color of the main fruit. The vegetable is colored purple both inside and out. It may even give the impression that it is a beetroot. There is no need to fear any negative consequences: the unusual appearance of the fetus is not associated with any sophisticated manipulations.
Purple potatoes, like other rare vegetable and spicy crops, are bred by classical breeding methods. There is no reliable data on where such a plant came from. However, the most reasoned version says that it was bred in South America. Moreover, some biologists believe that purple potatoes existed earlier than the usual white root crop. Now over a hundred varieties of lilac nightshade culture are known, almost all of them can be grown in Russia.
Varieties of purple potatoes differ among themselves in the tone of the pulp, or rather, in the saturation of the shade.
It should be borne in mind that such a plant requires very careful care. The maturation time is longer, and the yield is significantly lower than that of mass grown potatoes.Therefore, large agricultural enterprises in our country almost do not cultivate purple potatoes.
Before evaluating its culinary purpose, it is necessary to give a complete description of the benefits and harms of purple potatoes. Its fruits are rich in antioxidants. These substances help strengthen the immune system, which is extremely valuable in the autumn period, so long ripening and late harvesting can be considered not as a disadvantage, but as an advantage. Regular potatoes are already fully harvested - and its purple variety is just ripening.
Importantly, purple potatoes have a significantly lower amount of starch and sugar than the usual variety. For this reason, it is considered more suitable for diet food. The systematic intake of anthocyanin, one of the antioxidants, can slow down skin aging. For those who do not want to use expensive creams and even postpone plastic surgery, this property of the product is very useful. A decent concentration of vitamin A has the following properties:
- improvement of visual perception (especially at dusk);
- reducing the risk of vascular disorders;
- reducing the risk of malignant neoplasms.
Since purple potatoes contain relatively little starch, they have a positive effect on the digestive system. It should be borne in mind that when using this vegetable, blood pressure may decrease, therefore, with hypotension, it is contraindicated. In addition, even perfectly healthy people should beware of excessive consumption of purple fruits. Most often, purple potatoes of the Vitalot variety are grown in Russia. He came to our country from France. The tuber may have a mass of over 0.5 kg.The fruits are harvested at the end of September and October, but the late harvest keeps very well.
Domestic breeders bred another variety - "Amethyst". This plant tolerates adverse climatic conditions well, even in the northern part of the Urals it will develop well. Potato "Amethyst" gives an average yield, tolerates late blight and leaf curl. Even potato cancer is not terrible for him. Tubers can grow up to 0.4 kg.
But regardless of the variety, it is still necessary to be able to use the collected fruits. Professional cooks believe that purple potatoes should be baked. The tubers are rubbed with olive oil. Having dealt with purple potatoes, you can safely move on to another tropical plant species - black tomatoes. It’s worth mentioning right away: true black coloring is unusual for tomatoes. But they are very dark. As in the previous case, the unusual coloring is not associated with genetic modification. Black tomato has a richer taste than the usual red fruit.
This property is associated with a high concentration of sugar and organic acids. The fruits contain an increased amount of anthocyanins. The remaining substances enhance the overall tone of the body. Growing black tomatoes can be done in greenhouses or in open ground. But being interested in the name of varieties that are suitable for farms in the Moscow region or in another region, you need to focus on mass-used varieties. Extremely rare varieties will have to be ordered via the Internet.
"Black Crimea" has excellent disease resistance. The fruits of the plant ripen in 70–80 days, their average weight will be 0.5 kg. However, the harvest is stored for a very short time. "De Barao" can only be grown in greenhouses with high altitude. Between planting and harvesting fruits, 115–130 days will pass, the yield pleases most people (6 or 7 kg per 1 plant per season). So, "Black Prince" has a pleasant sweet taste. The fleshy pulp of the fruit has a high culinary value. "Chernomor" is close to it in gastronomic characteristics. This variety produces tomatoes weighing up to 0.3 kg. They are mostly consumed fresh.

Those who have grown crops of black tomatoes and purple potatoes will be happy to try purple carrots as well. But you can start the development of vegetables that are non-standard for Russia from it. Biologists believe that it is not entirely correct to consider purple carrots as an exotic vegetable: it was grown even earlier than the usual orange root crops. As in the three cases already discussed, the purple color is associated with a high concentration of anthocyanin.
The saturation of the color indicates how much calcium and magnesium are in the fruits. To choose a quality seed that will allow you to get a decent harvest, you need to check the smell and volumetric shape of the seeds. It should be understood that the choice of purple carrots is relatively poor. The main part of suppliers sells material of American, Dutch or French selection. When choosing, it is also necessary to take into account that the varieties belong to one of such species as:
- for early collection;
- for accumulation for the winter;
- for sale.
Agrotechnical practices for growing purple carrots are the same as for the cultivation of orange varieties. Of the late-ripening hybrids, the Purple Queen gives good results. The diameter of the fruit can be up to 5 cm. The length of a mature carrot is 20 cm. The fruits do not crack, they are an excellent food coloring.
It is worth paying attention to the following tips:
- when you need early carrots with elegant fruits, resistant to fungal infections, you need to choose "Purple Haze";
- if necessary, grow fruits that do not contain orange areas, you should give preference to "Purple F1";
- of the frost-resistant varieties, the "Purple Dragon" is recommended, which is distinguished by its even geometry, single blotches of white.
Root crops of unusual colors are fried, boiled and stewed. But you can also bake and steam them. Cooks use purple carrots as a decoration for other dishes. The taste of fruits is a pleasure even for real gourmets. These carrots are sweeter than regular carrots and produce excellent juice.
Hopi corn
If exotic varieties of tomatoes, carrots are already gradually being mastered in the beds of Russian vegetable gardens, then Hopi corn is much less common. Seeds of a rare variety are painted in unusual dark colors. However, in terms of agronomic characteristics, the plant differs little from those that give yellow cobs familiar to everyone. But blue corn is much healthier. Hopi contains a significant amount of fiber. The fibers of this substance help to suppress the feeling of hunger. While on a diet, with the help of Hopi corn, it is easy to avoid breakdowns.
But the benefits of fiber do not end there - it reduces the risk of diseases of the digestive system, and blue corn is also rich in anthocyanins.In culinary terms, this vegetable is also unusual. Few people expect a nutty taste from a cereal. This plant is included in many Mexican dishes. Land cultivation for planting Hopi is almost not required. Be sure to choose an open sunny area.
Planting seeds for seedlings is not carried out, they are planted directly into the ground after warming up to +5 degrees. In the country, in a regular garden, attractive rainbow cabbage can also be grown. Its shape is the same as that of the usual one, but the color of the heads of cabbage is significantly different. What is very important, after heat treatment, the richness of tones is not lost. The plant was bred by English breeders and its taste is quite familiar. But rainbow cabbage contains significantly more nutrients. It is clearly sweeter than the white variety or kohlrabi. Culinary experts note that this plant is just as tasty as ordinary cabbage. It can be put out or put in borscht or cabbage soup.
