It is important that the meat grade is the highest, and the stew is made in accordance with the requirements of GOST. This condition can be a guarantee that the jar contains meat, and not cartilage with soy. Among other things, it is necessary to procure top quality cereals, fresh vegetables and spices.

Selection and preparation of cereals

There are three main types of barley. The first type is barley, from which only one layer of hard peel has been removed. The second type is called Dutch - usually it has already gone through several stages of processing. Finally, the third type is barley groats, which are chopped barley.When choosing cereals, it should be understood that a high price does not always indicate quality - often the cost rises depending on the complex and colorful packaging.

Carefully working with your fingers, the barley is cleaned of dust, after which the dirty liquid is drained and the clean one is poured. The procedure will be repeated until the water becomes completely transparent. Ideally, at the last stage, the cereal will need to be put in a colander and rinsed under the tap.

Next, pearl barley is poured with clean cool water so that a liter of water per glass. She will have to swell from six to twelve hours, therefore it is better to carry out this procedure in the evening.

To properly and tasty cook barley with meat at home, it will take about an hour and a half of free time. The list of ingredients includes 340 grams of pork stew, 120 grams of carrots and the same amount of onions, 200 grams of cereals, 30 grams of parsley, spices and sunflower oil for frying. First, the cereal is soaked for about a quarter of an hour, and before that it is washed a couple of times.Then 400 milliliters of drinking water is poured into the saucepan, approximately 5 grams of salt are poured, and cereals are poured. Everything is put on fire and brought to a boil.

As soon as the liquid begins to gurgle, it will be possible to lower the stew with two bay leaves into it. If the meat is taken from a jar, then you should not lay out all the fat, otherwise the food will be excessively high in calories. At this moment, finely chopped carrots and onions are fried over low heat until light golden, and then, together with chopped herbs, are added to a common pan. Barley porridge is tightly closed with a lid, and the fire is reduced to the weakest. The dish will cook in a pan in about an hour.

After turning off the fire, you will need to leave the container on the stove for fifteen minutes and wrap it well with a towel. Serving is carried out hot, and the dish is necessarily sprinkled with fresh dill.

Although it is customary to cook meat barley on the stove, it can also be cooked in the oven in clay pots. Groats soaked from the night in the morning are laid out in containers and covered only with boiled water so that there is a gap of one centimeter between the level of the groats and the liquid level. Then everything is put into the oven, but it should be remembered that the pots are placed only open and either in a cold or slightly warm oven. In general, it will be necessary to cook porridge at a temperature of 200 degrees until forty minutes have elapsed from the moment it is fully heated. Before serving, each pot is to be flavored with butter and either a sweetener or salt is added, depending on the purpose.

In the case when there is a slow cooker, pressure cooker or similar equipment at home, it certainly makes sense to use it to prepare meat barley. The list of ingredients begins with one can of pork stew, followed by two special glasses of cereals, five of the same glasses of drinking water, one onion and one carrot, and spices. The onion with carrots is peeled and finely chopped, after which they are laid out in a bowl in which vegetable oil has already been heated on the “Baking” program. The roast is cooked until it turns a light golden color.

At this time, the stew is kneaded until a homogeneous consistency is obtained. Immediately you can salt, pepper and sprinkle everything with spices. The meat is laid out to the vegetables and, together with them, is processed for ten minutes. From above, everything is filled with washed and swollen barley and poured with freshly boiled water. The liquid level should slightly exceed the level of the product mass. It is better to cook pearl barley in the Plov program, and if it is absent, then in the Stew program. The heat treatment time, as a rule, is one and a half hours.

Even in a slow cooker, you can make a wonderful dish with chicken. The list of required ingredients includes half a can of chicken stew, a glass of cereal, a couple of carrots, a couple of tablespoons of vegetable oil, a large clove of garlic, an onion and spices. Pearl barley will first need to be washed, then let it swell for sixty minutes. Next, the water is decanted, the mass itself is transferred to a thermos and covered with one liter of freshly boiled water. In this state, barley will need to be about ninety minutes.

The onion is peeled and cut into semicircles, the carrot is rubbed on a coarse grater, and the garlic is chopped into small pieces. Having chosen the program "Frying", the products will have to be processed in oil for about ten minutes. Then garlic and the entire contents of the jar of stew are put into the bowl. After sprinkling the mass with salt and spices, you can put barley there and pour boiling water over everything. By choosing the “Pilaf” program and a time of twenty minutes, it will be possible to complete the dish. You can bring the porridge to readiness on heating.

Barley with meat will be even more interesting if you add mushrooms, usually champignons, and vegetables to the basic ingredients. For cooking, you will need ten medium-sized mushrooms, 500 grams of fresh cabbage, one onion, 300 grams of cereals, a can of beef stew, one carrot, three tablespoons of sour cream, three tablespoons of vegetable oil, one tablespoon of tomato paste, half a glass of broth, meat or vegetable, spices and fresh herbs. Barley is boiled in water with salt until it is ready, and then laid out in a colander. At this time, all the vegetables are thinly sliced, and the carrots are rubbed on a coarse grater. Washed mushrooms are cut into cubes.

In a deep frying pan or saucepan, vegetables and mushrooms are fried in hot oil, which are then poured with broth and stewed for fifteen minutes. Then cereals and meat are added to them, and the dish is seasoned with spices. The quenching takes about five minutes. At the last stage, sour cream and tomato paste are put into the container, everything is stirred, closed with a lid and infused for half an hour under a thick towel.

Do not forget about the case when porridge is mixed with eggplant, tomatoes and other vegetables.Three glasses of cereal will require one eggplant, two onions, a bunch of dill, one eggplant or zucchini, a can of stew and frying oil. The greens are finely chopped, the eggplant is cut into cubes without peel, and the zucchini is cut into halves of circles five millimeters thick. Porridge is boiled in any way, and onions and eggplant are fried in a pan until golden brown. Then pieces of tomatoes are added to the common container - they have to be heated under the lid until the released juice evaporates.

Next, the stew is laid out, which is fried with vegetables for three minutes, and at the last stage - porridge. As a result, all the ingredients must be mixed, salt, pepper and sprinkle with fresh herbs.

What can the dish be served with?

Although meat barley is tasty and nutritious in itself, it can be made even more interesting. For example, porridge should be cooked with fried mushrooms, best of all, champignons, some other stewed vegetables, like potatoes, and pickles. A combination of barley with a salad of fresh vegetables seasoned with homemade sour cream and young greens - dill or parsley - is always successful. However, Butter is considered the best addition to pearl barley.

Do not forget about the traditional frying in sunflower oil or sour cream. The most suitable spices are garlic, thyme or turmeric.
