Methods for making peach jam
Peach jam with its taste and aroma does not need any advertising - this is a delicacy that any gourmet will be delighted with. From conservation, made by hand for the winter, you get a lot of taste and aesthetic pleasure. The jam embodies a lot of amber colors, it reflects the reflection of sunlight in combination with translucent slices.
Peculiarities
To make jam, it is necessary that the fruits are quite hard and almost ripe; from green fruits, the jam will turn out sour and tasteless. Determining the ripeness of a peach is very simple, slightly recessed fingerprints remain on it when squeezed, in addition, a ripe peach has a strong pronounced aroma. Overripe fruit can only be used to make jam.
Before making jam from durum peaches, it is necessary to carry out preliminary blanching. In order for the skin of the fruit not to burst, it must be pierced several times with a toothpick, after which the peaches are placed for five minutes in pre-prepared boiling water, and then transferred to cold water for quick cooling.
If it is necessary to make jam without a skin, then the fruit should be dipped in boiling water for a few minutes, and the peel will be removed very quickly and accurately.
The peach has a characteristic feature - its stone is strongly fused with the pulp.To separate the bone, you must use a special spoon with a pointed one edge and a honed spout. Peach jam can also be made with pits.
Ripe peaches are very sweet, so care must be taken that the weight of the sugar is less than the weight of the fruit.
And so that the jam does not become candied during storage, when cooking, it is necessary to add citric acid or freshly squeezed lemon juice to it.
Lemon has preservative properties, and it also prevents the cut fruit from browning.
Cooking utensils should be enameled, and for stirring, a wooden spoon or spatula.
Jam can be prepared only from peaches alone, or you can add other fruits to them.
Easy way to cook
Pitted peach jam is a very tasty and delicate delicacy that you will definitely please your household and guests if you use this recipe.
You need to prepare the following ingredients:
- one kilogram of ripe fruit;
- 1.1 kilograms of granulated sugar;
- water in the volume of one glass;
- freshly squeezed juice of a small lemon (which can be replaced with 5 g of citric acid).
A step-by-step recipe includes a series of sequential actions.
- In order to prepare the fruit for cooking jam, you need to put them in hot water for a few minutes, and then transfer them to cold. Due to the sharp temperature difference, peaches will be very easy to peel.
- Remove bones.
- Cut the fruit into neat slices and lay them in layers in the prepared container, evenly pouring sugar and pouring lemon juice.
- Pour all the contents with hot boiled water, put on the stove and cook at low temperature until a foam forms, which must be removed.
- Turn off the heat and put the jam in a cool place until it cools completely. This procedure should be repeated two more times, that is, three times on low heat should be brought to a boil and cooled.
- The finished jam is poured into jars and closed with lids.
The usual way
Peaches are not indifferent all over the world, everyone loves them, canned fruits are sold in almost every supermarket, but hand-made preparations are always much more fragrant and tastier.
For such a jam, it is best to take dense peaches that are not yet fully ripe.
For cooking, we need the following ingredients:
- one kilogram of peaches;
- 800 grams of granulated sugar;
- vanilla pod.
The cooking process is simple.
- First of all, we separate the peaches from the pits, cut them into neat slices, sprinkle with sugar and leave for two hours so that the juice stands out. We put all the contents on a strong fire until boiling, then immediately reduce the heat to a minimum.
- Cook for half an hour, when the foam appears, remove it with a wooden spoon. Put the vanilla pod towards the end of the boil.
- We lay out the hot jam in prepared sterilized jars, which we immediately tightly close with lids.
- We put the jars upside down and cover with a thick cloth or blanket for 10 hours until completely cooled.
From whole peaches
If you cook jam from whole fruits correctly, then you will get a very beautiful amber sunny delicacy with its own unique aroma, and each individual peach will bring you a sea of gustatory emotions.
The peculiarity of this jam is that the fruits remain intact in it, so all the natural flavor remains inside.Peaches for such a jam should not be immature, because the jam will turn out to be very sour, and the fruits in it will be very tough. To prepare such a royal dessert, medium-sized and almost ripe peaches are taken. For cooking you need:
- 1 kilogram of peaches;
- 1.2 kilograms of granulated sugar.
Exceeding the weight of sugar contributes to obtaining high-quality preservation.
Consider the cooking process.
- In order for the fruits to be whole in the jam, they must first be soaked for 30 minutes in a solution of baking soda, the skin will become much denser. Soda will not affect the taste of jam if you carefully and thoroughly rinse the fruits after soaking.
- In order to determine the required amount of water to prepare the syrup, it is necessary to put the peaches in a saucepan in one layer and pour them with water to the top level of the fruit.
- Carefully remove the peaches, and pour sugar into the remaining water and, stirring constantly, bring to a boil over low heat.
- In boiling syrup, one by one, lay all the peaches, which were previously pierced in several places with a toothpick. This must be done, since an unpierced peel in hot water will immediately burst.
- Bring to a boil, make a minimum fire and cook for 7 minutes, constantly removing the resulting foam.
- Fruits are laid out in sterilized jars, the syrup is boiled again and poured into jars.
- To cool the finished jam, put in a cool place.
Try to evaluate the finished jam: the fruits should become translucent and significantly decrease in size, and the stone is visible through the pulp and peel. The jam is ready, roll up the lids and put upside down under a thick cloth to cool.
