Sunflower oil: features, benefits and harms
Almost every housewife periodically deals with sunflower oil. This product is used in the preparation of salads, first courses, side dishes, hot appetizers. What it is?
Sunflower seeds are the raw material for the production of sunflower oil. This product is widely used in cooking, paints and varnishes, pharmacology, cosmetology and other industries.
The technology for the production of sunflower oil was invented in 1829. After that, this product became the most consumed among other vegetable oils in our country.
Sunflower seed pomace is obtained through various technologies, however, they are based on approximately the same mechanism for processing raw materials, which includes a number of sequential processes:
- cleaning seeds from the shell;
- processing of purified kernels into a homogeneous mass;
- impact on the slurry with a special press;
- processing of the primary product.
Next, the product is subjected to final processing, which also involves several steps.
- centrifugation – removal of moisture and change in viscosity. With this method, it is possible to remove from the oil only the moisture that is in the state of emulsion, and solid elements whose specific gravity is greater than the specific gravity of the oil itself.
- Settling. Natural sedimentation of mechanical impurities and moisture, which are in suspension, with the oil standing still.
- Hydration (the process of removing phospholipids from the raw product);
- Filtration. The process of separating heterogeneous systems by means of porous partitions.
- Whitening. A technology that involves the interaction of sorbents with oil, due to which the product is clarified by removing compounds that give it a dark color.
- Deodorization. Removal of aromatic compounds from oil by running water vapor under vacuum.
- Freezing. This process is used to purify the oil from waxy impurities. The frozen product acquires transparency and changes its density.

Raw unrefined
In this case, the finished product only went through the filtration process.Such oil contains the greatest amount of useful substances, because the fewer production stages the product has gone through, the more valuable compounds from primary raw materials have been preserved in it.
This oil has a natural taste and a bright yellow tint. This product will be rich in phospholipids and fatty acids. However, unrefined oil is not intended for long-term storage.
Crude butter can be made using one of the technologies below.
- Cold pressed. This technology consists in pressing a certain amount of seed when heated to 45 degrees.
- Hot pressing. The prepared raw materials are subjected to heat treatment before squeezing to the boiling point (while it does not burn). Thanks to this, the finished product acquires a rich aroma and at the same time retains all the useful substances.
- Extraction, or extraction. This method of squeezing oils is considered the most economical. Due to it, maximum degreasing of the feedstock is ensured. This technology is considered cheaper, but the oil will be inferior in quality to products obtained by cold or hot pressing.
- Hydrated. The hydration process involves the purification of the oil from protein mucous compounds and phosphatides with hot water. Hydrated oil can also be of the highest, first and second grade.
- Refined. Produced by cleaning pressed sunflower seeds, it consists of triglycerides of fatty acids. Refined oil is nothing more than an extract purified from harmful waste components. However, in this case, the final product loses its characteristic color, smell and taste.
Depending on the degree of concentration of fatty acids valuable for the human body, sunflower pomace has four types:
- high oleic;
- medium oleic;
- high linoleic;
- high stearic.
How is it different from other vegetable oils?
Sunflower oil is one of the types of vegetable fats. Each of them has unique properties. In industrial production, a wide variety of vegetable fats are used. Sunflower, in turn, is used quite rarely.
Other vegetable oils are more popular outside of Russia, while sunflower oil is considered an original Russian product (the technology for making pomace from sunflower seeds was invented in the Russian Empire in the 19th century). Until now, it is considered the most popular oil among domestic housewives.

Contraindications and harm
Sunflower oil in some situations, instead of the expected benefits, can be harmful to health. This can happen in the following cases:
- in case of violation of the basic principles of product storage;
- oil abuse;
- incorrect use;
- use for the treatment of serious ailments without prior consultation with a specialist.
The unrefined product is prone to rapid oxidation, because of this it has a relatively short shelf life. When oxidative processes are already developing in its structure, a specific bitterness appears there, which indicates the beginning of the release of toxic compounds.
Therefore, it is necessary to consume oil before these phenomena begin to occur. It must be stored in a cool place protected from light.
With extreme caution, it is recommended to use this product or completely refuse to use it for the following people:
- suffering from chronic diseases of the heart or blood vessels;
- having functional pathologies of the biliary tract or gallbladder;
- suffering from diabetes;
- people with high blood cholesterol;
- having individual intolerance to the product.
Excessive consumption of sunflower moss can cause overweight. To prevent such an outcome, it is necessary to take with food no more than 3 tbsp. l. product per day.

How to do at home?
Supporters of a healthy diet who do not trust large manufacturers can make their own sunflower oil at home.
The standard technology for making pomace from sunflower seeds consists of the following steps:
- cleaning seeds from the shell;
- directly squeezing oil out of them;
- filtration (you can also clean the finished product in another way).
With the well-established home production of oil, professional equipment is used to clean the seeds: calibrators, oil presses, filters.
When making a small amount of homemade oil, the seeds can be cleaned using a special mill or a meat grinder familiar to every hostess. Next, a mixture of seeds with a spent impurity must be poured with cold water so that the cleanings surface. After the seeds are completely cleaned, it is necessary to throw them in a colander with gauze so that the water is completely glass.
Peeled seeds are not suitable for making homemade butter. Otherwise, it will have a bitter taste.
Let's move on to the extraction of oil. The press can be made from an aluminum pan. To do this, we make holes along its bottom closer to the middle (oil will flow out of them). At the bottom we make a hole for a long bolt and fix it tightly. The function of the piston will be performed by a wooden circle with a special hole for the bolt, on top of which the nut will be located.
Primary raw materials are placed in a press. After that, we begin to slowly tighten the nut. As the oil drains, tighten it until it stops. Beforehand, it is necessary to put a container under the press where the oil will drain.
