Semolina Dishes: Recipes and Cooking Secrets

Semolina Dishes: Recipes and Cooking Secrets

Semolina is still used by the majority only for making cereals. Misled about the undeniable benefits of semolina, society still uses it to this day as an introduction to complementary foods for babies. It is also an indispensable dish for breakfast in kindergartens, despite the fact that it can hardly be called a favorite dish among most preschool children.

But this cereal has one indisputable plus - the appropriate compatibility with various other products (it can be prepared with meat, and with any berry jam), thanks to which semolina has a wide range of applications today: from pastries and desserts to cooking second dishes. In numerous author's recipes, it is used both as the main product and as an auxiliary ingredient.

Peculiarities

We have already noted that traditionally, being considered a dairy product, semolina has always been a leader in the top of the most useful products. Moreover, having a low level of fiber, it is easily absorbed by the gastrointestinal tract.

If we talk about the benefits of low fiber, then this fact is undeniable today. And as for the allegedly undoubted benefits of semolina, then, being subjected to numerous studies, these days it is being questioned because of the gluten it contains, which can cause allergies in certain cases. But despite the above fact, semolina has found its application in other more healthy dishes, which in skillful hands become a real masterpiece of culinary art.

It should be noted that people who are overweight should use semolina dishes with caution, since, endowed with a considerable amount of carbohydrates, they contribute to obesity.

We are talking mainly about desserts on semolina (creams, puddings), where a large amount of sugar, various dyes, flavors are added to the main already carbohydrate product, that is, semolina, which makes the dish especially high-calorie.

As for semolina porridge, then, cooked in water without adding oil and enriched with fresh berries, it will not harm even people who are on a diet, but, on the contrary, it will saturate for a long time, endowing the body with vitamins of fresh berries, and diversifies the diet. Flour products with the use of semolina have the greatest benefit than without it, since the fats contained in flour (about 2 grams per 100 grams of product) “dissolve” in practically “fat-free” semolina (about 1 gram per 100 grams).

The main thing in such culinary experiments with semolina is that a person should not be allergic.

We have noted certain moments of dishes where cereals are the main ingredient, but no less often they are used as an auxiliary.

If we touch on the above aspect, then the second main use of semolina (after porridge) is associated with the preparation of curd casseroles, where semolina is added to give the dish some looseness and volume. Such casseroles do not have negative aspects that adversely affect the human body. First, the main ingredient is calcium-rich cottage cheese; secondly, the dish is not fried in oil, but baked in the oven, which eliminates the formation of cholesterol that clogs our blood vessels.If we are talking about frying, then it would be useful to note that it is allowed to use semolina as a breading, for example, for fish, meat cutlets and cheesecakes. In this case, it even has an advantage over crackers and flour for two main reasons:

  • absorbs much less oil than crackers;
  • does not burn like flour.

In many ways, the benefits and harms of semolina, like any other product, depend on the method of its preparation.

How to cook?

Guided by imagination, you can cook new and interesting dishes from semolina, and thanks to the wide development of technology today, this can be done in various ways:

  • in a frying pan;
  • in a multicooker;
  • in the microwave;
  • bake in the oven.

Modern frying pans, endowed with a non-stick coating, allow you to cook a dish without adding oil, moreover, without overcooking it. Here you get low-calorie, almost fat-free, compared to frying in butter, cheesecakes, cutlets, zrazy and meatballs.

The use of the oven in cooking most dishes, as well as cooking in non-stick pans, makes food less caloric. At the same time, in the oven, due to the uniform supply of heat, it is recommended to cook rather voluminous dishes, while the frying pan is suitable, for example, for chops, characterized by fineness.

And finally, a relatively new development in the development of technology is a multicooker. It is convenient because it allows you to cook a particular dish without much hassle. And manga is no exception. It is important to note that porridge prepared in this way never has lumps, its structure is always homogeneous. If your device does not have a “Porridge” menu, then the “Rice” key will do just fine.For a liquid or medium density porridge, you can lay all the necessary ingredients at the same time.

For lovers of thick cereals, products are laid in two stages: first, we add milk and butter, select the “Paste” mode, which takes a little more than five minutes to cook; after the required time has elapsed, we bring in the cereal and cook until the signal indicates readiness.

It is allowed to cook in a slow cooker and various muffins, both with partial addition of semolina to the dough, and with its full use (dough for making manna).

Although the microwave does not allow you to cook a dish for a large family, but thanks to it, without much effort in a matter of minutes (from 2 to 5, depending on the power), you can cook a portion of porridge. The oven is not suitable for preparing other dishes from the cereal in question.
