How to cook rice for sushi in a slow cooker?
Sushi was invented by a Japanese chef in the 19th century. He combined fresh raw fish with rice grits, seasoned with spices and wrapped in sheets of seaweed (whose name is nori). This peculiar dish quickly gained popularity among the population of Japan, and later beyond its borders.
Peculiarities
For two millennia, the rolls have not changed in the recipe, but several varieties have been added to them, the difference of which lies in the addition of additional ingredients. Rice groats, cooked in a non-standard way using a component such as rice vinegar, is a traditional dish in Japan. Also, Japanese chefs like to add different varieties of fish, soft cheese, avocado to the dish.
First of all, it is required to correctly select the variety of cereal and cook it in compliance with certain rules. Another interesting feature of this dish is the cooling of boiled rice, which also requires the right approach. Consider the necessary technology for cooking rice.
The cooked boiled product should be sticky, slightly boiled. For homemade delicious sushi, it is recommended to give preference to round rice groats. Long-grain varieties are not suitable for making rolls, as they contain less of the necessary adhesive substance that allows the Japanese delicacy to keep its shape.If you wish, you can purchase a special variety designed for making rolls. When boiled, it becomes viscous, which facilitates the formation of sushi, and their subsequent rolling into seaweed sheets.
Depending on the cooking method, the proportions of water and cereals may vary. However, the classic ratio often used in sushi bars is 1:1. In other words, one glass of cereal requires one glass of liquid, and no more. Otherwise, there is a chance of getting rice porridge.
Another important nuance is the pan. It is desirable that it be enameled, with thick walls and a bottom. It is also necessary to have a lid, since during the cooking process the cereal must be in a closed pan. This is necessary to preserve the taste of cereals. Remember that even a slightly open pot releases a large amount of steam, which is required to separate the sticky substance from the composition of the cereal.
Training
Even a minimal knowledge of how to prepare rice for cooking will help you achieve the necessary consistency of cereals for the future preparation of rolls and sushi. The crumbly version is considered the most delicious and healthy. But it is only suitable for cereals and pilaf, but you will need special rice. In order for rolls and sushi to acquire the necessary shape in the future, gluten must be isolated from rice groats. Thanks to her, boiled cereals are able to keep their shape.
First you need to process the cereal in the usual way. Put the product in a deep bowl and pour in the required amount of cool water, so that the liquid level completely covers the cereal. Next, vigorously stir the contents of the bowl.This is how you help the dirt and dust from the rice grains to come out in the form of sediment.
After a few minutes, drain the liquid and repeat the procedure again. There is no recommended number of washes, it is necessary to repeat the manipulations until the drained water becomes clear. This will indicate that the cereal is clean enough.
Washing of rice groats is by no means recommended to be ignored, since running water helps to wash out dust and dirt from the surface of the grain that enter during the transportation of the product to industrial enterprises. The range that is found on store shelves is processed with specialized chemicals. They are necessary to increase the shelf life of rice cereals.
In the process of washing, the grains partially get rid of harmful substances, which allows us to get a healthy dish as a result. Do not ignore this step, because thanks to it you will keep your body healthy and prevent harmful microorganisms from annoying you.
Recipe for the pot
In order to make the process of cooking rice groats more comfortable, it is recommended to use enameled dishes with a transparent lid. In order for the cereal to get the necessary sticky consistency, it is extremely important to observe the ratio of the ingredients used. For one glass of cereals take two hundred and fifty milliliters of cool clean water. If you need to increase the portion, keep the ratio with water, this is very important. There is no need to bring the water to a boil first.
Rice groats are poured in an even layer on the bottom of the pan and poured with cool water. Next, cover the dishes with a lid and, setting the maximum heat, bring the contents of the pan to a boil.Then the power of the burner must be reduced to the minimum mark and left for twelve minutes. After the time has elapsed, the pot with boiled cereal is removed from the stove and placed in a warm place for fifteen minutes, so that the cereal is infused.
Do not forget that all of the listed cooking steps in the pan are carried out with the lid closed. It is undesirable to open it until the croup acquires a state of readiness. In the meantime, you have time to prepare the rice vinegar. For the preparation of this product, strict adherence to proportions is also required.
So, from the ingredients you need to get:
- rice vinegar - 50 ml;
- granulated sugar - 30 g;
- salt - 10 g.
Rice vinegar is heated in a microwave oven for one minute (at maximum power), after which the liquid must be salted and granulated sugar added. The ingredients are thoroughly mixed until smooth.
Arrange the boiled rice in an even layer on a wide plate. Properly cooked rice groats should not stick to the walls of the pan, which greatly facilitates its further washing. If the recommendations for cooking rice were violated, it is likely that some of the cereal will be welded to the walls of the pan.
Washing the dishes from burnt rice is quite difficult, so it is advisable to soak the pan in hot water immediately.
Using a pastry spatula (or any other flat object), carefully pour the resulting rice vinegar over the entire surface of the plate. Then let the rice soak in the vinegar for the next 5-7 minutes. Then you can move on to rolling rolls and making sushi.
We use a slow cooker
Cooking rice cereal in a slow cooker takes much less time and does not require you to constantly “supervise” what is happening. Therefore, if you are a happy owner of this wonderful equipment, we strongly recommend that you use it. The presence of different modes allows you to achieve different results with the same set of ingredients. To obtain the sticky consistency we need, the following modes are suitable: "Buckwheat", "Stew", "Multi-cook". Let's consider each in more detail.
"Buckwheat"
When using the "Buckwheat" mode, it is desirable to take approximately the same ratio of ingredients. For example, two cups of rice groats require two and a half cups of pure water. Turn on the multicooker and activate the mode. The approximate cooking time for cereals in the "Buckwheat" mode is twenty-five minutes (depending on the multicooker model). After the time has elapsed, it remains to add rice vinegar, the recipe of which was indicated above. Then gently stir the contents of the bowl and leave the rice to infuse for ten minutes. After that, you can start cooking rolls and sushi.
"Extinguishing"
The next mode involves some changes in the proportions of the ingredients. To prepare two hundred grams of rice, three hundred grams of clean water is required. Remember to rinse the rice thoroughly to remove dust and dirt from the surface of the rice grains. Then the cereal is poured into the multicooker bowl and poured with the required volume of water.
Next, activate the "Baking" mode, which on most multicooker models is ten minutes. This mode will allow the rice to cook to a semi-cooked state. After the time has elapsed, without opening the lid of the multicooker, activate the "Extinguishing" mode for twenty minutes.During this short period of time, rice groats will begin to release the gluten necessary for making rolls and sushi.
While the multicooker is working, you can start making rice sauce. As soon as the rice is ready, without waiting for it to cool, pour the resulting dressing into the bowl. Let the rice soak in the sauce for 10-15 minutes, and feel free to start making sushi and rolls.
"Multi-cook"
The “Multi-cook” mode has its own subtleties of cooking, which require certain preparatory manipulations with the products. First, bring the water to a boil separately. In the meantime, you will have time to thoroughly rinse the rice. Then pour the cereal into the multicooker bowl and fill it with boiling water.
Activate the "Multi-cook" mode for ten minutes. At the end of the program, do not open the lid. Let the contents stand for fifteen minutes. As soon as the rice begins to cool, you can add rice vinegar. Make sure the contents of the bowl are soaked in the dressing, and gently toss. Then you can start cooking rolls and sushi.
