Choice of cereals

Depending on the processing method and variety, there are several varieties of rice. For the preparation of crumbly kupa, which is usually served as a side dish, long-length varieties, as well as steamed rice, are best suited. They do not boil soft during cooking, do not stick together.

Long-grain rice undergoes less processing than round, and therefore more healing substances are stored in it. But it also takes longer to prepare.

There is also wild and red rice, which does not stick together when cooked. A feature of such cereals is the preservation of the outer shell of the grain, due to which it contains more useful elements, in particular, B vitamins, fiber.

Wild rice surprises with a black edema of grains, however, this is only a shell, inside it is snow-white.

The red variety "Ruby", nicknamed so for its reddish hue, is famous. It has a mild nutty aftertaste and is quite versatile.

It is important to choose not only suitable, but also high-quality grain. It should not have a large amount of impurities and grain dust. It will be possible to evaluate the quality of raw materials better if you buy rice in a transparent package or a cardboard box with a transparent “window”.

All grains should be approximately the same size and shade. The presence of white or dark spots indicates a violation of the rules for storing cereals. You should not buy cereals that contain white, like chalk, grains. These are chalky, unripe rice kernels, which boil faster in the finished dish and spoil its taste.

If you see yellow inclusions in the raw material, this indicates that the rice was stored in a humid environment, and it may be infected with bacteria, fungi.

If you buy grains by weight, you can try to crack the grain. With a successful attempt, it is better to refuse the purchase - the grain will not be crumbly. Pay attention to the expiration date as well.

Grain preparation

An important step in the preparation of friable rice is its preliminary preparation. First of all, you need to sort out the cereals, sorting out large rubbish and defective grains.

    The next step is washing the grain to rid it of impurities and excess starch.

    There are two ways to wash grains.

    • In a deep bowl. Pour the rice into a container, pour water, lightly sort it out with your hands. The liquid will become cloudy, it must be drained and the procedure repeated. This should be done until it becomes clean. In the East, they say that rice should be washed in 7 waters, the only way to get a healthy and sacred (in many countries, rice is considered just that) dish.
    • In a sieve. Put the cereal in a sieve or colander with small holes and rinse it under running water. Do not turn on too much pressure. It will take 3-5 minutes to rinse, and you should also focus on the purity of the water flowing from the rice. When it becomes clean, the procedure can be stopped.

    When washing the cereal, you need to gradually increase the temperature of the water. If water at room temperature or a little cooler is used at the beginning of the process, then by the end of washing it should reach 50-60 degrees.

    It is better to soak the washed grain for a while in cool water. This will make the rice crumbly and shorten the cooking time. Round grains require the least soaking time (if you still decide to cook a dish from them). A quarter of an hour is enough. Medium-grain and long-grain rice is poured with water for half an hour - an hour, it is better to withstand the Cezva variety for up to 2-3 hours.

    However, if soaking long-grain rice is a process that is performed at the discretion of the hostess, then wild and red rice are all manufacturers advised to soak without fail. They are placed in water for 3-5 hours, you can leave it overnight.

    But the steamed grain cannot be poured with water, because of this, when cooked, it becomes brittle and boils soft. Rinse this species thoroughly under water.

    Water can be replaced with broth on vegetables or meat. Filling the cereal with hot water, you should immediately add salt, you can put spices and bay leaves. At first, the fire should be of medium intensity, however, as soon as the liquid begins to boil, the flame must be reduced.

    You need to cook rice in a thick-walled pan, which heats up evenly. Keep the pot covered during the entire cooking time. Do not mix rice, especially wild and red. This will destroy the shell of the grain, due to which the cereal will begin to boil soft.

    Cooking time depends on the type of cereal. Round-grain rice will be ready the fastest on the stove - after a quarter of an hour it can be removed from the fire. Long-grain and parboiled rice cook for about the same amount of time - about 30-40 minutes. The wild and red type of raw materials are cooked longer than others - about 40-50 minutes. If it is not pre-soaked, then the cooking time can increase up to one and a half hours.

    Some tricks will make the dish even more tasty and appetizing.

    • Put butter in the rice when you fill it with water.This will give the dish a delicate creamy aftertaste and make it more crumbly. For 250 g of cereal, 20 g of oil is required.
    • Pour a third of a glass of milk into the boiling water to give the rice a snow-white tint.
    • If you are worried that the rice will stick together, add table vinegar to the water and cook the cereal in the usual way. For 250 g of cereal, you need a little less than a tablespoon of vinegar.

    Groats are combined with such spices as zira, thyme, turmeric, saffron, ginger. The finished dish can be poured with lemon juice or lime juice to add a special piquancy. There are also a variety of dressings that help make it more refined. The easiest way is to season the dish with soy sauce. You can prepare a more complex and interesting dressing option - mix 2 parts of soy sauce and pomegranate juice, add a little grated fresh ginger root and ground black pepper.

    A crumbly dish can also be prepared with milk. No need to think that adding the latter will help get rice porridge. If you add a sweetener, you get a sweeter version.

    You should not combine rice of different varieties in one pan - for example, Basmati and Ruby. Due to different cooking times, you run the risk of overcooking one cereal or undercooking another. If you want to get an unusual-looking side dish, you can boil the cereals separately until ready, and then mix them in finished form.

    With what to combine?

    Loose rice is a side dish that is neutral in taste, equally harmoniously combined with meat and fish, seafood, and offal. It is allowed to supplement it with beef stroganoff or gravy. Rice with vegetables is considered dietary.You can add stewed onions and carrots, tomatoes, Mexican mixture to it.     It is good to combine cereals with spicy and spicy dishes - this is how it is served in most eastern countries.     Similarly, you can cook friable rice with meat. It is better to choose chicken or turkey, which cook faster. If you like beef and pork more, then you should cut them smaller, you can pre-marinate.
