Ryazhenka and Varenets are two excellent fermented milk products of Russian and Ukrainian cuisine. Both are tasty, healthy and well digestible. Despite the similarity, each product has its own characteristics, which are embedded in the technology of their preparation.

Varenets and ryazhenka came to us from ancient times, then people did not know electric and gas stoves. The milk, languishing for hours in the oven, acquired a unique baked taste. These products were prepared mainly in the winter, when the stoves were heated. Today we have to use modern stoves. But, if possible, the housewives also simmer the milk for a long time, evaporating the liquid from it.

To understand the difference, you need to consider both recipes for the preparation of fermented milk products.

Ryazhenka

Once ryazhenka in Ukraine was called "kolotukha". For its preparation, milk was poured into clay containers (glecheks). Today, you can also find similar dishes, clay, ceramic pots are not in short supply.

To cook ryazhenka at home, you need to preheat the oven well and put the milk to languish for 6-8 hours. The languishing temperature should not exceed 100 degrees, this is the optimal mode for the breakdown of proteins, thanks to this process, the beneficial properties of the product increase and its taste improves.

Baked for a long time in clay pots, the milk thickens, becomes thicker due to the evaporation of the liquid, and acquires a pleasant taste. After turning off the oven, it is left to cool, and then sour cream is added.The product is laid out in portions, insulated and left to ripen.

Varenets

During the preparation of Varentsa, the milk is also simmered for a long time, adding cream to it. The oven must maintain a temperature of 120 degrees. With gradual heating, milk does not boil away, but languishes, evaporating moisture and forming a brown crust. It becomes rich and fragrant.

After removing the product from the oven, let it cool down a bit and add yogurt to the still warm milk to saturate it with lactic acid bacteria. Then the varenets is transferred to a cool place for 5-7 hours.

The benefits of fermented baked milk and Varenets

Varenets and fermented baked milk provide an invaluable service for the gastrointestinal tract. Lactic acid bacteria improve the flora of the gastrointestinal tract and inhibit pathogens. With regular intake of these drinks, you can successfully fight dysbacteriosis and other intestinal disorders.

  • First of all, the cooking technology takes more time to boil the varenets.
  • Varenets has a lighter cream color, there are more brown shades in ryazhenka, it has a more pronounced taste of baked milk.
  • Due to the presence of sour cream, the fat content and calorie content of fermented baked milk is higher than that of other fermented milk products. Therefore, Varenets is more suitable as a drink for a diet menu.
  • Varenets has a higher acidity. Ryazhenka contains more calcium, but less phosphorus, otherwise the mineral composition differs little.
  • Ryazhenka is fermented with kefir fungi, and varenets is fermented with acidophilus bacillus (bacteria).
  • Ryazhenka is considered a product of Ukrainian cuisine, Varenets - Russian.
