Blackcurrant berries are known for the abundance of vitamins in their composition. In terms of vitamin C content, they are superior to oranges, therefore they have a powerful anti-cold and immunostimulating effect. It is enough to eat 15-20 berries or their equivalent in the form of jam daily to fill the body's daily need for ascorbic acid.

Among other vitamins - vitamin E, A, P, D, vitamins of group B, as well as quite rare vitamin K. The latter is involved in hematopoiesis.

Trace elements are primarily represented by potassium, iron, copper, manganese and phosphorus, zinc and silver are present in smaller volumes. A little-known fact, but blackcurrant can be called the champion among berries and fruits in terms of potassium content. There is even more of it in currants than in bananas.

Regardless of the chosen recipe, the berries must first be sorted out. For jam, those that have reached technical maturity, but have not overripe, are suitable. Otherwise, the crop is prone to fermentation, and the amount of vitamins in it is reduced by 2 times.

Berries need to be cleaned of litter, sticks and leaves. This is easy to do by lowering them into a basin of water. Then all the rubbish will remain floating on the surface. It is unacceptable to use cracked and rotten berries. The former are also highly likely to begin to rot, the latter will spoil the taste of the dish and cause the blanks to ferment.

Among the most popular options for cooking currants is Five Minute Jam, from the name of which it is clear that it will be cooked for only 5 minutes. However, the process is usually repeated 3 times at regular intervals. In other words, it will take 2-3 days to cook jam, but do not worry, because every day you will have to stand at the stove for no more than 10-15 minutes.

5-minute blackcurrant:

    • 1 kg currant;
    • 1.5 kg of granulated sugar;
    • 250 ml of water.

    Currants must be prepared in the manner described above, and sweet syrup should be boiled from sugar and water.After it starts to boil, put the berries there and bring it to a boil again.

    This, perhaps, is the main secret of preparing the Five Minutes. If you just add sweetener to the berries, they will crack and give juice. When cooked in syrup, the berries remain whole and are soaked in syrup, retaining their own juice.

    After the composition again reaches a boil, it is boiled for 5 minutes and left to cool, preferably overnight. In the morning, the procedure is repeated twice, and between cooking you need to wait for the jam to cool completely.

    After the third "five minutes" it is not necessary to cool the composition, it should be poured into jars and corked.

    If the jam is stored in the refrigerator, nylon lids are enough, if in the cellar, metal ones will be required.

    Shredded currant. The recipe can be called basic for making raw currants. It can be varied by adding other ingredients.

    Main cast:

      • 1 kg of berries;
      • 1.5 kg of sugar.

      Berries should be mashed using a pusher, meat grinder or blender. Pour the mass with sugar and leave for a quarter of an hour, then mix. The dish cannot yet be considered ready, because if you immediately transfer it to a jar, there is a high probability of fermentation. It is better to cover the container with a gauze cloth and leave it in the refrigerator for a couple of days. Stir the mixture regularly.

      During these days, the sugar will completely dissolve, it remains only to distribute the jam into jars and close the lid. Before clogging the composition, you need to pour a 1.5-2 cm layer of sugar, that is, you need to apply jam not to the very edges of the jar. Such a sugar “cork” will protect raw jam from the penetration of pathogenic flora.

      In this form, it will last up to a year, provided that the storage temperature is not higher than 1 degree above zero.

      Instead of sugar, you can use honey, however, it should be fresh, liquid consistency. Honey and currant should be taken in equal proportions. A natural sweetener should preferably be neutral in taste - linden, acacia. The latter has the advantage of not being candied, so the mixture will retain its semi-liquid consistency.

      A raw dish can be supplemented with raspberries, oranges, gooseberries. All components are also ground or made their way in a meat grinder. Orange should be used along with the peel. It should first be scalded with boiling water to remove the wax layer on the surface of the skin.

      Blackcurrant jam turns out to be semi-liquid, so it is well suited for making fruit drinks, soaking cakes and muffins, adding to baking dough. However, such a product will not work as a filling - it will flow out and start to burn. It is much more practical for such purposes to make dark berry jam.

      However, the resulting delicacy can also be used as an independent dessert. In addition, it can be wrapped in pancakes, served with cheesecakes and pancakes, put in cereals, cottage cheese.

      Blackcurrant Jam:

      • 1200 g blackcurrant puree;
      • 1 kg of sugar.

      You can make mashed berries by punching them raw with a blender, passing them through a meat grinder, or rubbing them manually with a pusher. From 1500-1700 g of fresh berries, the required amount of puree will be obtained.

      The composition should be filled with half the norm of the sweetener and, with constant stirring, cook for about 20 minutes. Then add the remaining granulated sugar and boil until tender (about half an hour). Ready jam when cooling should not spread over the surface of the plate.

      Adding water and thickeners is not required.Grinded berries contain liquid, so the puree will not burn, and there is enough pectin in their composition to provide a jelly-like structure to the dish.

      The following recipe cannot be called jelly, it is rather a jelly-like jam. A great recipe for those who like a thicker, richer jam.

      Jellied jam:

      • 5 cups currants
      • 6 glasses of granulated sugar;
      • 1 glass of water.

      Pour currants with sugar, give time for it to begin to secrete juice. Stir the mixture, pour in water and put on medium heat. Bring to a boil, reduce the heat and leave the dish to simmer for another 5-10 minutes. It is necessary to stir the dish and remove the foam. Distribute hot in jars, roll up with lids.

      Fans of original recipes will probably like the following recipe. Worries that the taste of pumpkin will be clearly felt and inappropriate are in vain. This vegetable (botanically the same berry) has a neutral taste and emphasizes the flavors of the rest of the ingredients. In addition, it will add a delicate puree-like texture to the dish, but not every taster will identify it in the composition.

      Pumpkin and Blackcurrant Jam:

      • 350 g blackcurrant (the dish can be made from both fresh and frozen berries);
      • 200 g pumpkin pulp (take a small one, for example, nutmeg);
      • a teaspoon of butter;
      • 100 g sugar.

      The pumpkin pulp should be cut into small pieces or thin slices, add a little water (a third of a glass) and simmer in a saucepan until soft. Prepare syrup from water and sweetener, and when it boils, immerse berries in it.

      Dip currants in syrup for 7-10 minutes, then add pumpkin (drain excess liquid), oil. Cook for another quarter of an hour. Serve chilled.

      If this is a blank for the winter, without cooling, distribute it among the banks, seal with lids.

      In jam, not only raw, but also “five-minute”, you can add other seasonal berries - gooseberries, raspberries. It is important to maintain a balance between the amount of berries and sugar. As a basis, you can take the classic recipe, which involves taking the same amount of sweetener and a glass of water for 15 glasses of currant berries.

      The total volume of berries when cooking assorted should remain the same (15 glasses), but they can be “collected” in different ways. For example, take 3 cups of raspberries and gooseberries, then 9 cups will remain for currants. The combination of 5 glasses of red currant, 2 glasses of white and 8 - black will also turn out to be interesting. Sugar and water are added in the same volume.

      Delicious black berry jam can be prepared not only on the stove, but also in a slow cooker. At the same time, experienced housewives recommend using the "Soup" mode if you want to cook jam with clear syrup and whole berries, and the "Stewing" program for making jam.

      The process of preparing a dish in a slow cooker is not much different from those described above. Any of the described recipes can be adapted to cooking in this appliance.

      Blackcurrant jam in a slow cooker. Take berries and sugar in equal amounts. Usually, no more than 1.5 kg of each ingredient fits in the bowl of the device. Berries pre-peel and wash, put in a bowl and activate the "Extinguishing" mode. The berries should release juice.

      When this happens, sugar should be added in small portions. It should be added little by little, waiting for the sweetener to dissolve, and only after that adding a new portion. The whole process is carried out in the "Extinguishing" mode, the cooking time is about an hour.       It is best to cook a dish of grown and collected berries with your own hands. They need to be collected after darkening or no later than a week after that. If the currant hangs on a bush for more than 1.5-2 weeks, it is prone to fermentation, and the concentration of medicinal substances in it is halved.

      Harvest should be on a dry day, as the dew subsides. It is better to pluck with brushes so as not to crush the berry. The harvested crop should be stored in the refrigerator, but not more than 3 days.

      To cook currant jam, you should use enamel-coated dishes and wooden kitchen utensils - a pusher, spatulas, etc. When using metal analogues, jam may oxidize.

      Blanching will help preserve the original appearance of currants in jam. To do this, the berries are thrown into boiling water for a couple of minutes, and then washed under cold water. This method will avoid wrinkling of the berries, retain their juice and color.

      Evidence that the jam is ready will be the cessation of the appearance of foam. However, until this happens, the foam should be removed, otherwise the jam will become cloudy.

      Currant does not like long cooking. From this, it ceases to be useful and acquires a "rubber" taste. The optimal cooking time is 5-15 minutes. Another thing is when it comes to currant jam or marmalade. Here you need to evaporate the liquid from the berries to achieve the desired consistency. As a rule, it takes 40-50 minutes.

      In some sources, you can find information that jars for currant jam may not be sterilized. The acids contained supposedly destroy pathogenic microorganisms.However, this is not true, since organic acids have a very weak antibacterial effect.

      It is important to properly sterilize the jars for at least 10-15 minutes, as well as to scald the utensils used in cooking the jam, and wipe the surfaces thoroughly. This will save the blanks from spoilage, and the tasters from botulism.

      Unlike vegetable preparations, jars with currant jam should not be turned over, since when it comes into contact with the metal surfaces of the lids, the product may oxidize. But using an old blanket to insulate a container with hot jam will not be superfluous. A sharp change in temperature inside and outside the cans will not benefit the blanks. You need to keep the jars in a blanket until they cool completely, and then put them in a permanent storage place.

      You need to store currant jam in a dark, cool place - shelves on the mezzanine or a refrigerator are quite suitable for this. Only a refrigerator or cellar should be used to store a raw dish or jelly.
