Contraindications

Like any other food product containing a huge number of vitamins and minerals, beet tops have their own contraindications, and with some diagnoses, they can harm the body.

The leaves contain a high concentration of oxalic acid - 0.7 mg per 100 g of product. When interacting with calcium and phosphorus, it forms salts that are rather difficult to be excreted from the body, which often leads to the formation of stones. Therefore, people with chronic and acute pathologies of the urinary system and gallbladder should limit the use of beet leaves - it should be minimal and, at the same time, must be accompanied by an abundant intake of water.

Beet tops are contraindicated for people who take anticoagulants, since vitamin K, which is part of it, and its already increased concentration in the blood increases even more.

For any diseases of the gastrointestinal tract in the acute stage, before using beet tops, you should consult with your doctor.

How to store?

After the beets ripen, they dig them out along with the tops, after which the leaves are cut off, otherwise they will continue to suck the juices from the root crop, and it will wither pretty quickly. However, many sellers on the market are aware of the nutritional value of beet leaves, so they sell their root crop along with the green part - this is the kind of beet you should buy.

When buying, you should pay special attention to the foliage - its color and condition: if they are fresh, keep their shape well and play with bright colors, then you can safely buy such tops.

According to folk medicine, fresh tops plucked directly from the garden have the most healing effect, since it contains the maximum concentrations of vitamins and nutrients, which means that it can have a general strengthening and healing effect on a person. Doctors recommend using the leaves throughout the season - from May to October, only in this case the product will strengthen the immune system, normalize the digestive processes in the body and speed up the metabolism.

Unfortunately, with the onset of cold weather, it becomes impossible to get tops from the garden, therefore, in order not to deprive themselves of such a source of vitamins, many resort to freezing.

To do this, follow several recommendations.

Collection

For freezing, only freshly harvested tops should be used, any storage in the refrigerator before freezing is undesirable, since a significant part of the nutrients is lost. When collecting leaves, they should be cut off at the very surface of the soil along with the petioles: in this case, the plant will give new greens, and after a while it will be possible to replenish your vitamin pantry.

Treatment

Before freezing, green leaves and petioles should be washed in cool running water, while rubbing each leaf with your fingers in order to completely remove any remaining sand, earth and dust. Then the petioles are cut off from the bottom by 2-3 cm - this part should be thrown away, since nitrates and other harmful substances contained in the soil and atmosphere accumulate in it.

Training

In order to freeze the leaves of the table beet, they must first be crushed - cut into thin strips of about 0.7-10 mm wide. Petioles are chopped into small cubes, after which both components of the blanks are thoroughly mixed in a dish and poured with boiling water for 5-10 minutes.

After this treatment, the greens are placed in a colander so that excess liquid can drain, and then sent to dry. Please note that no heat sources should be used to speed up the drying process - the process should be as natural as possible.

Freeze

The prepared mixture is poured into special plastic containers or bags for freezing food. The leaves do not need to be rammed, as in this case it will be quite difficult to separate them from each other in the future.

The tops harvested in this way can be consumed until the next spring, it is added to salads, first and second courses, introduced into snacks and, if necessary, included in the structure of medicines.

Some housewives dry beet leaves - this method cannot be called very successful, since with this storage method a significant part of the nutrients is lost.

Another interesting way to harvest tops for the winter is storage with salt. Leaves for this are prepared in the same way as for freezing, and then mixed, sprinkled with table salt and lightly rubbed. After the salt is completely dissolved, the resulting mixture is tightly placed in sterilized jars. This seasoning is used for salads and soups. Store a container with salted tops in the refrigerator for no more than 6 months.

Popular recipes for storing tops also involve fermentation and pickling - such products do not have any healing benefits, but they have an excellent taste and favorably set off meat and vegetable dishes.

How can be used?

Using beet green tops is quite simple - a small amount of fresh, well-chopped or frozen leaves is simply added to light salads, seasoned with side dishes and vegetable soups.

In addition, its therapeutic effect has been proven in violation of metabolic processes and problems of the gastrointestinal tract. Infusion of beet leaves helps to normalize lymph flow and improves bile flow.

In order to prepare the drug, you should pour a tablespoon of dry or fresh herbs with a liter of boiling water and hold in a water bath for 10-15 minutes. or just leave it to infuse for half an hour. The medicine should be filtered immediately after preparation and drunk one glass 20-30 minutes before breakfast, lunch and dinner.
