Mascarpone was invented 4 centuries ago in Northern Italy. It is made from expired, thickened fermented milk products. The use of cheese is quite wide. It can be added to hot dishes (risotto, Italian pasta), thanks to which they acquire a delicate structure, in snacks or in sweet recipes.
How to cook at home
Making Mascarpone at home is quick and easy (only 10 minutes).
You only need 2 ingredients:
- 20% cream - 1 liter;
- lemon juice - 45 ml.
The cream must be heated to 80 C. Add lemon juice or diluted lemon. Put on a slow fire for 10 minutes. Put the cream on a linen or multilayer gauze fabric. Let it drain for a day. The cheese is ready. About 350 grams of the finished product is obtained from a liter of cream.
Pasta with Mascarpone cheese
To prepare this dish you will need:
- pasta - 230 g;
- mushrooms - 200 g;
- grated parmesan - a quarter cup;
- mascarpone - 95 g;
- spinach - 110 g;
- nutmeg - half;
- olive oil - a few tablespoons;
- salt, pepper - optional;
- garlic - 3 pieces.
Ingredients are for 4 people.
Before you start cooking a dish, you need to remember a few recommendations from top chefs.
- In order for the pasta to have a beautiful appearance (as in restaurants) and not fall apart, it is recommended to slightly undercook it. It is important to find the edge so that the product retains its elastic shape, but at the same time it is not raw.
- It is recommended to serve pasta with tomato juice.
- For a beautiful visual design for cooking pasta, it is better to use brown pasta and mushrooms.
When the pasta is cooked, you need to leave some of the liquid in which they were cooked in order to prepare the sauce with it.
Pour oil into a heated frying pan and add finely chopped garlic. Let it fry for half a minute. Then put chopped mushrooms (champignons), grated nutmeg into the pan. Mix everything well, fry over moderate heat for 6 minutes. Reduce the heat and add the chopped spinach to the vegetables. Simmer for 3 minutes with regular stirring.
Add 0.5 cups of water, Mascarpone, Parmesan, salt and pepper to the pan. Pasta is added to the pan 2-3 minutes before the dish is ready. All ingredients are well mixed, languish for several minutes to saturate the aroma and are removed from the stove.
Risotto with Mascarpone
To prepare a dish for 8 people you will need:
- carrots - 6 pcs.;
- meat broth - 1 liter;
- special rice - 1.5 cups;
- mascarpone - 1/4 cup;
- onion - 1/3 cup;
- parmesan - ¾ cup;
- dry white wine - half a mug;
- butter - 15 g;
- parsley - 10 g;
- vegetable oil - 10 ml;
- fresh thyme - 5 g;
- sugar - 5 g;
- salt - 2 g.
Pour a large spoonful of oils of both types into a preheated pan. Add grated carrots, fry for 4 minutes. Then pour water into the pan, add salt and sugar, cover with a lid and let the carrots sweat for 5 minutes.
After that, remove the lid and wait until the liquid evaporates (the carrots should be slightly fried).Mix half of the cooked carrots with ¾ cup of water and grind in a blender. Put the rest of the mass in a bowl.
The same pan in which the carrots were stewed can also be used for frying. To do this, add 2 tbsp. l. butter and 1 vegetable oil. When they warm up and begin to sizzle, lay finely chopped onions. Fry with regular stirring for 2-3 minutes. Add rice, stir and cook for 1 more minute. Add wine and cook the dish until the liquid has completely evaporated, remembering to stir regularly.
Add carrot puree to the mass, mix, sweat for a minute. Pour the preheated broth into the pan gradually in 100 ml increments. The next portion can be poured in only when the liquid added before this has completely evaporated. This operation must be repeated 8 times. The last 200 ml will be needed later.
Add the carrots that have been set aside to the rice (reserving a little for garnish). Also put in the pan grated parmesan, mascarpone (you can replace it with whipped cream), chopped parsley and thyme. Add the remaining 200 ml of broth (dividing it into 4 portions), salt, pepper.
Put the finished risotto on plates, decorate with parmesan, carrots and parsley.
fruit dessert
To create this delicious savory dish, you need to take:
- mascarpone - 210 g;
- nuts;
- fruits (nectarines, pineapples, apricots, kiwi);
- berries (strawberries, mulberries, black currants, blueberries).
The fruit is finely chopped, the cheese is kneaded using a fork. All ingredients are combined and mixed well.
Tiramisu
To prepare this dessert you will need:
- mascarpone - 230 g;
- cream with a fat content of more than 20% - 1/4 cup;
- cookies "Lady's fingers" - 15 pieces;
- chicken yolks - 2 pieces;
- rum - 30 ml;
- instant coffee - 4 tsp;
- cocoa - 1 tbsp. l.;
- water - 140 ml;
- dark chocolate - 1 tbsp. l. (for decoration);
- sugar - ¼ cup;
- salt - on the tip of a knife.
Mix rum, coffee and water until smooth. Beat chicken yolks with a blender. Add salt and sugar, beat for a few minutes until the mass becomes white. Pour in the rum, beat for another half a minute. Add Mascarpone to the beaten yolks, put the mixer on low speed and beat the mass for another half a minute.
The cream also needs to be whipped. First at slow speed for 1 minute and then at medium speed for 3 minutes so that soft peaks form.
Mix the next part of the cream with cheese, mix well. Then add the rest of the cream. Mix everything well again.
Dip the biscuits one by one into the coffee mass for a few seconds, and then place them in a single layer in a split form with dimensions of 18x13.
Spread ½ of the cream on the cookies, spread evenly with a tablespoon. Sprinkle cocoa powder on top. Do the next layers in the same way.
Cover the finished dessert and put it in the refrigerator for a day. Sprinkle the Tiramisu with chocolate chips before serving.
strawberry dessert
For cooking you will need:
- natural yogurt - half a glass;
- mascarpone - 200 g;
- strawberries - 250 g;
- lemon juice - 1 tsp;
- white chocolate - 100 g;
- powdered sugar - 2 tbsp. l.
This amount of ingredients is enough for 2 servings. If it is impossible to use real Mascarpone, it can be replaced with cream or curd cheese, however, the taste of the dessert will be completely different.
Break the chocolate into small pieces, put in a cup and put in a water bath.Wait until the chocolate has completely melted and becomes homogeneous in consistency.
Beat the cheese with yogurt in a mixer until a homogeneous mass is obtained. Add chocolate mixture and continue beating.
Put the resulting mass into bowls, cover with a film and put in the refrigerator to cool for 45 minutes.
Rinse the strawberries well, remove particles of earth, ponytails, put on a napkin so that excess moisture is removed from the glass. Load the berries into a blender. Pour in lemon juice and add powdered sugar (to taste). Bring the berries to a puree state. Pour the strawberry mass over the cheese layer and put in the refrigerator to cool.
Bread with two kinds of cheese
For cooking you will need:
- loaf - 1 pc.;
- mascarpone - 100 g;
- onions - 1 pc.;
- feta cheese - 200 g;
- smoked sausage - 130 g;
- garlic - 2 cloves;
- salt, pepper - to taste;
- some parsley, dill, spinach and dill.
You can bake a loaf yourself or buy it in a store. Cut it into pieces, but not completely, leaving 1 cm. It is necessary that the bread does not fall apart.
Grind greens in a blender, add Mascarpone, garlic, onion and feta. Blend until you get a uniform consistency. Add finely chopped sausage to the resulting mass. Stuff the bread with the prepared mass, wrap it in foil and send it to the oven for half an hour at a temperature of 150 C.
The finished dish is served with soups.
