How to prepare fruits?
The right choice of berries is the key to a bright and pleasant taste of the workpiece. Cherries should be selected ripe, fresh and quite large. Large fruits allow you to keep their shape and contain enough juice. Before cooking, the berries are sorted out: all spoiled, diseased or unripe fruits are removed. Then the cherry is peeled of leaves and twigs and washed as carefully as possible so that mechanical action does not lead to early juicing.
Bones are removed at will. For the procedure, you can use a safety pin, thin sharp stick or other suitable device. The only rule is to try to keep the pulp as whole as possible.
If it is decided to leave the cherry with stones, then it is worth remembering one rule: such preparations must be consumed in eight or ten months. Otherwise, after a specified period, the bones will become poisonous, since one of their components is transformed into hydrocyanic acid.

Cooking cherries in their own juice with pits is not particularly difficult. The desired number of berries is sorted and washed, after which it is laid out in pre-sterilized containers. Everything is filled to the top with boiling water, after which it is sent for heat treatment.
This happens as follows: a large saucepan is selected, the bottom of which is covered several times with a folded towel or wooden grate. Ready-made cans are placed in it, covered, but not twisted with lids. After that, water is poured into a large container so that it reaches the line, after which the jar narrows to the neck.
The pan is put on fire and brought to a low boil, after which the countdown begins. If the volume of the jar is 0.5 liters, then it is necessary to sterilize within fifteen minutes, and if 1 liter, then within twenty minutes. During the process, the cherry will decrease in size, so you will have to add fresh berries from time to time. Upon completion, the containers are rolled up, turned upside down and left until cool.
Previously, turning off the fire, you can leave the cherry for twenty minutes so that it starts up the juice.
To prepare berries with seeds and sugar, you first have to sort out the cherries and separate one third from it. From this third, the seeds will still have to be removed, and then crushed and squeezed out the juice. Sugar is added to the resulting liquid so that there are 300 grams of sweetener per liter.Everything is brought to a boil and kept on fire until the sand dissolves.
The rest of the cherries are laid out in prepared containers, everything is poured with syrup. Sterilization is carried out at a temperature of 100 degrees from twenty to twenty-five minutes, depending on the volume of the container. Then the jars are rolled up, turned upside down, wrapped in a blanket or other warm cloth and left until cool.
If it was decided to prepare a seedless sugar berry, then 300 grams of sugar will have to be prepared per kilogram of cherries. The berries are sorted out, pitted, and then laid out in a saucepan.
Everything is sprinkled with sugar and brought to a boil. As soon as the mass has reached the "extreme point", it is removed from the fire and laid out in pre-treated cans. Containers can be immediately rolled up.
A “drunk” cherry in its own juice will be amazing and piquant. To prepare it, you need to purchase a kilogram of berries, 700 grams of granulated sugar, 300 milliliters of water and 200 milliliters of alcohol, cognac or vodka. Berries are washed and dried. Sugar is poured into the water, and the pan is put on fire. While stirring, bring it to a boil.

After the specified period, the cherry is taken out of the pan and laid out in jars. At this time, the syrup is mixed with alcohol. The resulting solution is filled with berries, and everything is immediately closed with lids. Banks are placed on the bottom until the final cooling.
Multicooker owners can prepare this dish using the following technique. A kilogram of berries will have only a glass of sugar. The total cooking time will be quite long: first, the washed cherries are placed in a slow cooker, sprinkled with sugar and set aside for four hours - they need to produce juice.
After that, the “Steam” mode is selected, which is activated for a third of an hour, and then the “Extinguishing” mode for an hour. If there is a “Preparation” mode, then it can replace “Steam”, being turned on for half an hour, and then “Extinguishing” will have to be turned on again. Ready cherries are laid out in jars and rolled up.
The dish can also be prepared in the microwave. This will require a kilogram of berries and a kilogram of granulated sugar. Berries are prepared in a standard way, and the containers themselves can be processed in a microwave oven. Banks are washed, filled with a third of water and placed in the microwave at maximum power. After about five minutes, they get out, freed from water and dried.
In the container, granulated sugar and berries are laid out in layers, sugar should be at the top. The mass is a bit crushed with a spoon. Then all the cans are placed in the microwave, where the maximum power is selected, for a quarter of an hour. After that, the power is reduced by almost half, and sterilization continues for another five minutes.
As soon as foam appears on the surface, the cherry can be taken out and rolled up.

Tips
It is customary to cook cherries in their own juice in glass jars with a volume of 0.5 liters or 1 liter. Small containers are much more convenient for consumption, because an open dessert cannot be stored for a long time, and the volume is just enough for one-time use. Banks will have to be washed and sterilized in any working way. For example, they can be held for three minutes over steam.
You can also put the containers in a cold oven, select a temperature of 100 degrees, and then wait until they heat up so that the moisture has completely evaporated. Covers can be tin or aluminum, and screw samples are completed with metal parts. The main requirement for lids is the ability to resist oxidation. Usually they are washed with soda and boiled for three minutes.
It has already been said about the undoubted importance of whole berries, but, thanks to some procedures, it will be possible to use wormy ones.
Spoiled fruits have only to be poured with cold water, in which a little vinegar or salt is dissolved. After a period of five to ten minutes, all pests will float to the surface, and the berries can be rinsed with clean water and used further.
Finished blanks will need to be stored in dark places, even better in complete darkness, as light affects the color of the product, makes it ferment and turn sour. There are no special requirements for temperature, the cherry feels quite comfortable in living quarters, so you can leave it for the winter in the pantry.
