How to freeze wild strawberries for the winter?
Strawberries are one of the tastiest berries and due to their healing properties, they help fight many diseases, including colds and flu. However, it can be very difficult to preserve the chemical composition and nutrients of fruits until winter. Freezing berries solves this problem and helps preserve their nutritional and taste qualities.
The benefits of berries
Wild strawberries are very useful for the body. Regular consumption of berries stimulates anti-aging processes, removes bad cholesterol and normalizes blood pressure. In folk medicine, strawberry fruits are used for hypertension, various forms of vitamin deficiency and atherosclerotic diseases. Fruit infusion is used for diseases of the gastrointestinal tract, urinary system and kidneys. Decoctions are used as general tonic and tonic.
Strawberries are also used for external use. Compresses from tincture of fruits have a wound-healing effect and treat acne. Preparatory stage
The best time to harvest berries for freezing is in the morning. It is recommended to collect fruits in dry, clear weather. Harvesting strawberries after rain can adversely affect the quality of the berries, which are likely to be loose and tasteless. Fully ripened, but not overripe, berries of the correct form, devoid of visible flaws, should be selected. Then the collected fruits must be cleaned of grass, stalks and sepals and gently rinsed in cool water.
For washing, it is better to use a deep bowl; it is not recommended to wash the berries under running water. This requirement is due to the fact that tender berries can be damaged under the pressure of water and become sour. After washing, the fruits should be laid out on a dry and clean napkin to dry. The better the berries dry, the higher the taste they will have.
Freezing methods
Before choosing a method for freezing strawberries, it is necessary to determine for what purpose the freezing is performed, and in what capacity the berry will be used after defrosting. For example, if strawberries will be used to decorate cakes and desserts, then the most important thing will be to preserve their original appearance. Such a berry needs preliminary especially careful selection and freezing of fruits at some distance from each other.
To do this, the fruits are laid out on a tray or plate, and sent for a couple of hours to the freezer. Then the fruits are taken out, carefully poured into a clean and dry plastic bag and put into the freezer for storage. Plastic containers with lids or glass jars can be used instead of bags.
However, if the preservation of the presentation of strawberries is not important, then the freezing of the berries can be done by any of the proposed methods.
- Freezing whole berries with sugar. The method is quite simple and not labor intensive. The berries are laid out on a plate or tray and frozen in the freezer for 2-3 hours. When distributing fruits on a plate, the main condition is to prevent contact and sticking of berries. After the strawberries are frozen, they should be placed in a plastic bag and sprinkled with sugar on top. Then the contents of the package must be mixed well, evenly distributing sugar between the berries, and put away for storage. For 500 g of berries, one and a half glasses of sugar are required, however, its amount may vary based on the personal preferences of the hostess.
- Freezing grated berries with sugar. This method is well suited for strawberries that have lost their shape and presentation. The fruits are covered with sugar in a ratio of 1: 1 and ground in a mortar. For lack of a mortar, you can use a blender. The resulting mass is laid out in ice molds and put into the freezer. After 7-8 hours, the molds are removed from the freezer, and their contents are decomposed into bags and put away for storage.
- Freezing berries in ice. This method is suitable for freezing small berries, which can later be used to decorate a cocktail or lemonade. To do this, you need to distribute small dry fruits into the cells of the container for freezing ice, fill each cell with cool boiled water and put it in the freezer for 8 hours. 1-2 berries should be placed in each cell. After the water freezes, the cubes are poured into a plastic bag and put away for storage.
- Strawberries in syrup. To freeze the berries in this way, you need to pour two liters of water into the pan, pour half a kilogram of granulated sugar into it and boil. Then you need to wash 500-600 g of berries, distribute them in molds for baking or ice and pour over the cooled syrup. Freeze in the freezer for at least 24 hours, then transfer the molds to a bag and send to the freezer.
Application
Frozen strawberries are used not only in traditional medicine. The berry is an independent food product and is part of many confectionery dishes. Whole fruits decorate cakes, ice cream and desserts. The pureed berry is an indispensable ingredient in creams for cakes, and is also used to make toppings for pancakes, cottage cheese, milk porridges and casseroles.
Frozen cubes of syrup or water with whole fruits are an essential ingredient in cocktails and cold drinks. And fruits sprinkled with sugar can be used as an independent dish as a dessert.

- The optimum temperature for freezing strawberries is from -18 to -23 degrees. The berry harvested in this way can be stored from 8 months to a year.
- In the absence of a freezer and the freezing of fruits in a freezer with a temperature of 0 to -8, the shelf life will be three months.
- Particular attention should be paid to the mode of defrosting strawberries. This procedure must be carried out slowly. The optimum temperature for defrosting is 0 degrees. Usually, this temperature happens on the upper shelves of the refrigerator, so you should place the berry for defrosting on them.
- As containers for long-term storage of strawberries, plastic bags or plastic containers with tight-fitting lids should be used.
- Do not leave frozen fruits in the freezer open. This will lead to freezing of the product and loss of its taste properties. In addition, syrup or ice cubes can be saturated with unpleasant odors, such as the smell of fish or "reek of a refrigerator."
